Winter is definitely upon us for the next few months whether we like it or not. Is there anything better than a hearty, healthy bowl of hot soup on a chilly day? If you love cumin, coriander and curry as much as I do then this Curried Creamy Cauliflower and Kale soup is right up your alley. Roasting the cauliflower brings out the natural flavors and produces a rich creamy, vegan soup.
A classic for sure this Creamy Roasted Red Pepper Tomato Soup will become a crowd favorite at your house. Pair it with a nice, melted grilled cheese sandwich.
Looking for something a little more hearty? This Vegan White Bean Quinoa Chili is a great way to switch up the traditional tomato based chili. Full of flavor and plant based protein it makes and excellent post workout meal.
