Colorful Family Table Cookbook Review and Giveaway

Coming in hot this Fast Friday with a quick review of “The Colorful Family Table” cookbook. Now that we are all at home and looking for ways to spice up our daily family meals, a cookbook like this one is a welcome addition to any kitchen. Ilene Godofsky Moreno, health coach and mom of 2 designed these plant based meals to be “colorful not complicated”. I received a copy of the her book in exchange for an honest review.

I find it can be a challenge to get the rest of my family on board with more plant based meals. The recipes here are created from simple and very familiar vegetables. Instructions are easy to follow and not time consuming. Just what we want in a recipe. I love that Ilene has divided her cookbook into seasons making it much easier to plan meals.

 

Winter recipes offer veggie packed stews and soups. The loaded cauliflower baked potato soup (p.85) is right up my alley and a perfect way to sneak in some cauliflower. All photos courtesy of the author/publisher.

I am a huge sweet potato fan and this Miso Tahini Sweet Potato & Tofu Grilled Cheese (p. 40) is screaming my name. So much simpler than they look.

Chickpea artichoke “crab cakes” (p. 156) are such a fun summer BBQ idea for plant based eaters. I cannot wait to try these out.

    Cauliflower loaded baked potato soup sounds amazing! Even though it’s April, we’re still having some chilly weather so I’m not completely over soups just yet.

    I love cooking. I think everyone could find more ways to incorporate more veggies into their meals. I just don’t like when there are a ton of ingredients!

    This all sounds so good. I definitely want to make the artichoke and chickpea crab cakes and I dont even like crab cakes. And the soup? I’m going to have to check this out!
