Celebrate Cinco De Mayo From Home with these Meatless Meals

Thanks for joining Sarah and me for Meatless Monday. With April almost in the rear view, it’s time to focus on that all too fun May holiday, Cinco De Mayo. This year, most of us are celebrating at home but that does not mean we cannot have the most delicious meals. Today I am sharing a few of my favorite Meatless Meals perfect for Cinco De Mayo.

    • So now, my biggest questions to you are: What are you making for Cinco De Mayo? Are you a Mexican food fan like I am? How great is it that Taco Tuesday and Cinco De Mayo are on the same day? A two-fer. The perfect excuse to double dip into some guacamole! Beer or margaritas?

Meatless Meals for Cinco De Mayo

Why not start celebrating at breakfast? These Easy Muffin Pan Huevos Rancheros or Crunchy Black Bean Taquitos make a great presentation and are easy to customize. The kids can even help out with the prep.

My all time favorite Pumpkin Jalapeño Cornbread is a fantastic side to the Best 3 Bean Chili.

A few of my reader favorites are this Sweet and Spicy Apple Jicama Slaw and this Tex Mex Brown Rice Salad. Good enough to eat on their own for lunch or pair as a side for dinner. Both make great leftovers to bring your lunch to work (at your desk).

Onto Dinner time! Easy Black Bean and Spinach Enchilada Lasagna is the best of both worlds in one casserole dish. The Best 3 Bean Vegan Chili can be made ahead in your slow cooker. Squash is always a great choice and these Roasted Squash and Spicy Black Bean Quesadillas are fun a simple. Don’t forget to pair that up with my lightened up Mexican Street Corn-a healthier take on the classic prep.

    I made enchiladas Saturday night and now I want to try enchilada lasagna since it seems easier than rolling them all up.

    How sad is it that Cinco de Mayo finally falls on Taco Tuesday and we can’t go out to celebrate?! Oh well, at least we have these great recipes to make some delicious meals at home! 🙂

    We’ve been in such a Groundhog Day mode, I totally forgot that Cinco de Mayo is coming up! I love any excuse to celebrate with Mexican food 🙂 Everything looks delicious & now I need to go eat lunch!

    On St. Patrick’s Day I complained to a friend of mine that it would be the lamest St. Patrick’s Day ever, and she said “Oh, I don’t celebrate it – I’m not Irish”. Hello, I’m not Irish either but I celebrate it AND Cinco de Mayo (and I’m not Mexican either)! Come on, people, let’s enjoy ALL the fun holidays regardless of ethnicity! That’s just common sense… am I right?

    Definitely margarita over beer for me. Your recipe ideas are always great, even in pandemic-land!
