Thanks for joining Sarah and me for Meatless Monday today. Wow we are already into the last Monday of August. My how this summer has flown by! I could not let summer end without sharing one last BBQ party worthy salad with you all. This Sweet and Spicy Apple Jicama Slaw is just the dish to send summer off with a delicious end.
Sweet and Spicy Apple Jicama Slaw
This Sweet and Spicy Apple Jicama Slaw could not be easier to throw together for a last minute BBQ or quick family meal side. Buying your cabbage already shredded in those easy to grab salad bags, makes this slaw even easier. I love to use apples as a sweetener and a crunch. Adding Jicama is a fun twist and adds a layer of texture.
Jicama, found widely at most grocery stores, is a root vegetable that is low in carbs. High in vitamin C, magnesium, potassium and fiber, jicama is a tasty nutritious to any salad.
I love a light, zippy and flavorful dressing on my slaws and this Sweet and Spicy Apple Jicama Slaw has a fruity base of lime and lemon juice. I use a little bit of honey for sweetness and if you like a little kick, I am kind of obsessed with this “hot honey”.
The sweet and spicy combination is one of my favorites to do for salads. If you are not into spicy, just decrease the jalapeño to a 1/2 instead of a whole pepper. Using the hot honey also gives a nice little kick that everyone will love. Vegan and Gluten free.
I couldn’t let summer end without one more yummy veggie slaw. Hope you all enjoy this quick and easy Sweet and Spicy Apple Jicama Slaw. What’s your “have to make one more time before summer ends” recipe?
