Thanks for joining Sarah and me for Meatless Monday today. Soup season is upon us! For me, there is nothing better than coming in from a cold run and enjoying a nice piping hot bowl of goodness to warm me up from the inside out. I am sharing my favorite 7 Healthy Vegetarian Soups to eat this winter. Hope some of them become your favorites too.

Matzo Ball Ramen Soup

A fun blending of 2 cultures. This soup combines the best of Ramen with a splash of Jewish heritage. Matzo balls are easy to make ahead and a fun addition to this soup.

Creamy Roasted Red Pepper & Tomato Soup

The classic tomato soup gets an update with some roasted red peppers. Blended chick peas offer a non dairy creamy and hearty flavor. Grilled Cheese croutons are a fun topping.

One of my all time favorite soups! Better than take out and a cinch to make. Top with a hard boiled egg for extra protein.

West African Peanut Soup

My most recent soup creation. This bowl of goodness was a huge hit for my Soup Club last month. If you have never tried this delectable blend of sweet potatoes and peanut butter, drop everything and make it this week. You will not be disappointed.

    They all look yummy but the roasted red pepper and tomato soup stood out to me. I love tomato soup and I imagine the roasted red pepper would add so much extra flavor!

    These all look so delish, but I’m especially fond of the red pepper tomato masterpiece! That was a hit the first time I made it, and it’s one of my favorites!!!

    I love soups since you can make a big pot and get a bunch of meals from it. The roasted red pepper and tomato soup might have to make our meal plan for after Christmas when I don’t need to worry about produce going bad!

    You know how I feel about soup season! I can’t wait to be back on my feet so I can try some of these recipes. The crockpot lentil looks phenomenal. Currently, we are being fed by virtue of a very generous meal train, so we are getting some delicious recipes that way, as well.
