Whipped Feta and Watermelon Bites
An easy way to elevate summer watermelon. These Whipped Feta and Watermelon Bites are ready in minutes. They won’t last much longer than that once you put them out for your family or at your next BBQ.
What are the ingredients I need?
Super simple. All you need is watermelon, feta cheese, ricotta cheese, a dash of mint, and a drizzle of Balsamic. For the feta mixture, I chose low-fat feta and part skim ricotta. Any type will do! Make sure you use a high quality Balsamic vinegar or a balsamic glaze. Both are easy to find at any grocery store.
Tell me how to make it
Simply add your feta and ricotta to a food processor. Add a dash of mint and pulse for a few seconds to combine. This can be mixed in advance and kept in the refrigerator until ready to serve. I like to transfer the cheese mixture to a plastic bag, cut off the tip, and then pipe it onto the watermelon. Drizzle on your Balsamic right before serving. Garnish with fresh mint or basil if you have it.
About the Watermelon
For ease of serving, the seedless watermelon will work best. Cut into any shape and arrange on your platter. I used burger molds to get these into a uniform shape. Pipe on the feta mixture and the balsamic. That’s it!

Ingredients
- 1 seedless watermelon
- 1 C feta cheese
- 1 C ricotta Cheese
- pinch of mint
- Balsamic for drizzle
Instructions
- Cut your watermelon into bite sized pieces
- arrange on platter
- in a food processor add feta and ricotta and mint
- pulse until smooth
- add to plastic bag and pipe onto watermelon slices
- drizzle on balsamic and serve

cheese mixture can be made in advance and refigerated
