Thanks for joining Sarah and me for Meatless Monday today. The Holiday Season is just about over and for me, that means,  back to my normal healthy eating. Winter is definitely upon us for the next few months whether we like it or not. Is there anything better than a hearty, healthy bowl of hot soup on a chilly day? I am sharing my favorites from this year-my Super Soups. Hope some of them are new to you.

All of these Super Soups are well, super easy to whip up day of and can be made in a crock pot or on the stove. Filled with fresh and healthy ingredients, your belly will thank you. With my Soup Club about to start up again, my mind is full of delicious ideas.

If you love cumin, coriander and curry as much as I do then this Curried Creamy Cauliflower and Kale soup is right up your alley. Roasting the cauliflower brings out the natural flavors and produces a rich creamy, vegan soup.

A classic for sure this Creamy Roasted Red Pepper Tomato Soup will become a crowd favorite at your house. Pair it with a nice, melted grilled cheese sandwich.

Looking for something a little more hearty? This Vegan White Bean Quinoa Chili is a great way to switch up the traditional tomato based chili. Full of flavor and plant based protein it makes and excellent post workout meal.

    All of these look delicious. I love soup this time of year. I usually toss things together, but I’m going to try to follow a recipe for a change and try these!

    My eating habits have been horrible over the holidays and if I am honest, really since my trip to Europe in September. I am determined to get back on track and will be scrolling through your recipes for some healthier options in 2019. Can’t wait to see you in April! Happy new year!

    It’s snowing right now and I really just want to snuggle up with a cozy bowl of soup! I just fed the bread for fresh sourdough, which I haven’t made in weeks and now dreaming of making grilled cheese to have with tomato soup tomorrow.

    Mmmm. I love soup so much! The cauliflower and kale recipe sounds super interesting.

    We had white chicken chili today. I would love to figure out a vegetarian version of it, just to mix things up, but not entirely sure what to sub for the chicken.
