Greek Orzo Salad
I have been using Better Than Bouillon vegan certified vegetable bases for years in my soups and chilis. Most recently, I’ve found a new tasty way to incorporate them into my life. Did you know that you can prepare all of your rice, whole grains and even orzo with Better Than Bouillon instead of water? Why do this you ask? Well, admittedly, grains are pretty bland tasting on their own. Infusing them with flavor while they cook creates a much more delicious tasting grain. I am now using them for all my grains and rice cooking. I’ve even used them in my oatmeal breakfast bakes. It’s a game changer!
Back to today’s Meatless Monday. This Greek Orzo Salad is filled with some of my favorite foods. I am all about the fresh and flavorful summer tomatoes right now and those are front and center here in differing varieties. Crisp and cool cucumbers, colorful bell peppers and fresh feta cheese join the mix. I threw in some chick peas for extra protein and texture.
This cool summer salad is so easy to make and enjoy the leftovers all week long. Start by preparing your orzo by cooking it in Better Than Bouillon to infuse it with flavor. My favorite flavor is the roasted garlic but there are 4 more fabulous flavors to choose from. From “Vegetarian No Chicken base”, “Vegetarian No Beef Base”, “Organic seasoned vegetable base” and “Seasoned vegetable base”, Better than Bouillon has your “bases” covered. Pun intended of course! The best thing is that they are a concentrated paste that won’t expire quickly like canned broths. Find them for yourself at your local grocer.
- 12 oz package of Orzo
- 2 Tbl spoons of Better Than Bouillon vegetable base
- (I used roasted garlic)
- 2 Cups of cherry or grape tomatoes (halved)
- 2 Cups of chopped cucumbers
- 2 bell peppers (red, green or yellow) diced
- 1 15 oz can of Garbanzo beans (rinsed and drained)
- 2-4 oz of fresh feta cheese
- 6 oz jar of artichoke hearts-halved
- optional olives and/or Pepperoncini
- juice of 1-2 lemons
- 1/2 C EVOO
- 1/4 cup Balsamic vinegar
- 1/4 C apple cider vinegar
- salt and pepper to taste
- sprinkle of oregano
- Prepare orzo according to package
- mix in 2 tbl of Better Than Bouillon into the water
- drain and cool
- Prepare all veggies and add to a large bowl
- mix in orzo
- add all dressing ingredients and spices
- Chill and enjoy!
