One of the many things I love about fall are the yummy vegetables that are in season. Eating seasonally can help you save money and also elevate your meals to the next level. I am sharing a few of my all time favorite Meatless Fall Recipes To Make Now. Apples, Pomegranates, Pears, Sweet Potato, Eggplant, Kale and Squash are just a few of the autumn produce options to try.
Fall Recipes To Make Now
Seasonal Breakfast Recipes
Whether you are a PSl lover or not, pumpkin can be a delicious and healthy addition to breakfast. Hosting family over Thanksgiving? Whip up this Cinnamon Raisin Challah French Toast or Pumpkin Cranberry Holiday Oatmeal Bake and wow your guests.
Scrumptious Sides
A nice twist to a traditional cornbread, this Pumpkin Jalapeño Cornbread is a savory side to pair with soup or chili.
Salads
Fall Farro & Brussels Sprouts Crunch Salad with Maple Balsamic Dressing is a quick and easy weekday lunch.
Savory Main Dishes
On busy days, it’s easy to throw together this quick Spicy Squash and Black Bean Quesadilla. Use leftover squash of any variety for a unique flavor combination.
Eggplant is a favorite all year around and is especially tasty this time of the year. This hearty Roasted Chermoula Eggplant with Farro and spiced Chick Peas is fancy enough for a vegetarian Thanksgiving option. Surprisingly easy to prepare and full of flavor.
Feeling like a hearty stew? This Fall Lentil Stew is an easy way to incorporate more intimidating veggies like turnips and parsnips. I was a little uncertain about how to cook with them myself until I started adding them to stews.
Tell me, do you enjoy eating seasonally? What are your favorite fall foods and how do you like to prepare them? Have you started planning your holiday menu yet?

These all look so good! I always get excited to eat some more fall veggies this time of year but for many of them I never know how to use them. Thanks for the ideas!
I think people can get really intimidated about using fall veggies but really it’s easy!
All so yummy looking! I’ve been feasting on a fall-ish kale/apple quinoa salad. I love all the fall foods.
I enjoy the fall foods too and I am so glad that soup season is here too
I do enjoy all the pumpkin stuff this time of year (breads, muffins, bars, etc.), but am not really into the PSL craze. Thanks for the great selection of foods & recipes! Ha, in answer to your question, no I am not even thinking about any holiday menus yet LOL
I am not a PSL person but I do like actual pumpkin and squash
I love eating seasonally. We went apple picking a few weeks ago and made an apple crisp. Last fall I found a spinach and sweet potato salad which is so good since it uses apples too. I need to pick up the ingredients so I can make it again.
The quesadillas sounds good and like a fun change from the usual black beans I put in.
Yes it is a fun change and easy to make
All look very yummy. Thanks for sharing. I am drooling over the eggplant dish!
The eggplant dish is one of my faves for sure
Oh my gosh all these recipes sounds delicious. Will you come to my house for Thanksgiving and make these:)
Ha that would be fun!
I love fall foods – so comforting! I’m just starting to dive into my soup recipes now that it’s getting cooler. I’m going to have to try your pumpkin cornbread!
It’s one of my faves hope you enjoy it
Fall soups and stews are by far my favorite – I am going to try out that lentil stew soon!
Great it’s a good one 🙂
I love soups in the fall/winter! And of course move into chilis as winter really arrives (hopefully not for quite some time). I enjoy eating veggie food, but getting the hubby on board is not easy, although he will eat what I serve him. 🙂
It’s been 25 years and I still cannot get my husband on board!!
Ohh! That holiday Oatmeal bake looks so good! I am definitely ready for fall cooking!
Your kids will like it
What caught my eye was the squash and black bean quesadilla! Thanks for all these awesome fall selections.
One of my go to’s for sure!
Everything looks delicious, especially the salad and the quesadillas.
Those are 2 of my favorites for sure
Mmm, you’ve got me in the mood for quesadillas!
I am always in the mood for them!
Yum, yum, yum!
It’s still too hot to really think about fall, but I love soups (chicken and dumpling, baked pototo, pumpkin curry, etc), chili, and everything in between.
That lentil dish looks good, too.
Thanks it was a perfect soup week here this week
All of these look AMAZING!! I love eating meatless as much as possible and these tasty recipes make it SO easy.
Thanks so much Kaila hope I gave you some ideas to try
