I love eating seasonally. We went apple picking a few weeks ago and made an apple crisp. Last fall I found a spinach and sweet potato salad which is so good since it uses apples too. I need to pick up the ingredients so I can make it again.
The quesadillas sounds good and like a fun change from the usual black beans I put in.

I love soups in the fall/winter! And of course move into chilis as winter really arrives (hopefully not for quite some time). I enjoy eating veggie food, but getting the hubby on board is not easy, although he will eat what I serve him. 🙂
