    These all look so good! I always get excited to eat some more fall veggies this time of year but for many of them I never know how to use them. Thanks for the ideas!

      I think people can get really intimidated about using fall veggies but really it’s easy!

    I do enjoy all the pumpkin stuff this time of year (breads, muffins, bars, etc.), but am not really into the PSL craze. Thanks for the great selection of foods & recipes! Ha, in answer to your question, no I am not even thinking about any holiday menus yet LOL

    I love eating seasonally. We went apple picking a few weeks ago and made an apple crisp. Last fall I found a spinach and sweet potato salad which is so good since it uses apples too. I need to pick up the ingredients so I can make it again.

    The quesadillas sounds good and like a fun change from the usual black beans I put in.

    I love soups in the fall/winter! And of course move into chilis as winter really arrives (hopefully not for quite some time). I enjoy eating veggie food, but getting the hubby on board is not easy, although he will eat what I serve him. 🙂

    Yum, yum, yum!

    It’s still too hot to really think about fall, but I love soups (chicken and dumpling, baked pototo, pumpkin curry, etc), chili, and everything in between.

    That lentil dish looks good, too.
