Sweet Potato Muffins w/ a Surprise inside-Meatless Monday

I got the idea for these muffins while thinking about fall holiday staples like Sweet Potato casserole with marshmallow on top. These little babies have all of the yum of a casserole in a healthy portion controlled muffin. They came out better than I expected. Hope you enjoy!

Sweet Potato Muffins with a surprise inside-Meatless Monday
Recipe Type: muffin

Prep time: 15 mins
Cook time: 20 mins
Total time: 35 mins
Serves: 12
Delicious sweet potato muffins with a surprise marshmallow inside. All of the goodness of sweet potato casserole in healthy yummy muffin
Ingredients
  • 3 Tbl butter softened
  • 1 3/4 C flour
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 heaping tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp allspice
  • 1/4 tsp cloves
  • 1/2 C Splenda for baking blend (you can use real sugar equiv is 1 C)
  • 1/4 C vegetable oil
  • 1 C mashed cooked sweet potato (about 1 large-no skin)
  • optional: add 1 scoop of your favorite vanilla protein powder
  • 2 extra large eggs
  • 2/3 C of water
  • 12 marshmallows
Instructions
  1. Pre-heat oven to 350 degrees
  2. line muffin pans with paper liners
  3. Whisk together flour, salt, baking soda, baking powder, cinnamon, nutmeg allspice, cloves, protein powder
  4. In a mixer combine: butter, sugar of choice, oil on high speed about 1 minute
  5. Add Sweet Potato and combine
  6. Add eggs combine
  7. On low slowly add flour mixture and 2/3 C water and mix until combined-do not overmix
  8. Divide evenly into 12 muffins and add 1 marshmallow into the center of each
  9. Bake for 19-21 minutes until toothpick come out clean and marshmallow has puffed up and browned

    Hmm, may have to give these a try. Wonder if I can get away with reducing the amount of sugar (I don’t use fake sugars…) I know one of my kids would love these.

      I think you can play around with the amount a bit. They taste just like pumpkin so good.

    This is such a good idea! I only just started eating sweet potato casserole not a long while ago, and I can’t believe I’ve been missing out on it for so long! Love the idea of portion control since that is my big problem, haha!
