Thanks for joining Sarah and me for Meatless Monday today. I don’t know about you, but when we get to this point in the summer, I am looking for quick and easy lunches. I am also looking for healthy and satisfying lunches. This Smokey Black Bean, Hummus, and Avocado Sandwich checks all of those buttons for me.
Smokey Black Bean, Hummus and Avocado Sandwich
Not only is this easy lunch idea a no cook option, it’s also made from ingredients that you most likely buy each week. I strive to add high quality, plant based protein options to my meals. This vegan Black bean, hummus and avocado sandwich is up to the job.
I simply took some canned black beans, drained them and mixed in a little smokey and spicy salsa. Your favorite salsa will do. I mashed them with a fork which took about 30 seconds. Next, I smeared them onto one side of some toasted multigrain bread. (I like Dave’s Killer Bread in the red package) On the other side of bread, I slathered on my favorite hummus.
Of course, there is sliced avocado. Avocado makes everything better. I piled on some tomatoes and lettuce. Alfalfa sprouts will also do if you can find them. If you are not a vegan, a slice of sharp cheddar cheese is always a great addition.
It really does take just 5 minutes to create this Smokey Black Bean, Hummus and Avocado Sandwich. Filled with high quality, plant based ingredients, this will be one of your go to lunches. Such a good idea to mix a little salsa in with the beans. Alfalfa sprouts are such a good addition to sandwiches but I never think to try to find them in a grocery store.
