Greek Orzo Salad
I have been using Better Than Bouillon vegan certified vegetable bases for years in my soups and chilis. Most recently, I’ve found a new tasty way to incorporate them into my life. Back to today’s Meatless Monday. This Greek Orzo Salad is filled with some of my favorite foods. I am all about the fresh and flavorful summer tomatoes right now and those are front and center here in differing varieties. Crisp and cool cucumbers, colorful bell peppers and fresh feta cheese join the mix. I threw in some chick peas for extra protein and texture.
This cool summer salad is so easy to make and enjoy the leftovers all week long. Start by preparing your orzo by cooking it in Better Than Bouillon to infuse it with flavor. My favorite flavor is the roasted garlic but there are 4 more fabulous flavors to choose from. From “Vegetarian No Chicken base”, “Vegetarian No Beef Base”, “Organic seasoned vegetable base” and “Seasoned vegetable base”, Better than Bouillon has your “bases” covered. Pun intended of course! Love this salad! Yum. Cooking rice with bullion is a great idea — I use light coconut milk once in a while. But I don’t get it for oatmeal — which flavor do you use for that?

I have been loving using it for my grains. I like more a savory oatmeal with veggies vs a sweet one. You can use the no chicken broth bouillon for oatmeal bakes and it gives it a nice flavor.

You can control how much bouillon you add in so it’s perfect to adjust to your taste preference. One of the great advantages to using it vs a canned or boxed broth.
