Thanks for joining Sarah and me for Meatless Monday today. I know we are still a few weeks away from Cinco De Mayo but seriously I could eat Mexican inspired foods all the time. Oh wait, I do eat Mexican inspired foods all the time. I took one of my favorite protein packed meals and turned it into an easy any day of the week treat. These Easy Muffin Pan Huevos Rancheros are seriously delish. I am excited to share them with you today.
Easy Muffin Pan Huevos Rancheros
I love a tasty, cheesy, spicy egg rich Huevos Rancheros as a breakfast or brunch treat. But, often it takes a lot of time to whip up and sometimes I am just not that motivated. Ordering it out at a restaurant feels a little too decadent. I’ve come up with a healthy and easy way to have my eggs and eat them too. 🙂 This Easy Muffin Pan Heuvos Rancheros will change the way you do breakfast.
Each serving has one corn tortilla, one whole egg, a little cheese, black beans and diced green peppers. You can make as many or as few as you wish for the same effort. In under 20 minutes you have a healthy, delicious and protein packed meal. I had them for lunch after a workout and they were just perfect to refuel with. Trust me these Muffin Pan Huevos Rancheros are a must make.
I like to use a silicone muffin pan for easy removal and for easy clean up of these Muffin Pan Huevos Rancheros. You can find one here. Corn tortillas are readily available at any grocery store. The 6 inch size works well and are gluten free. You can load them up with any veggies, beans or added protein you like. Just don’t forget the salsa!

What’s your order at a restaurant breakfast? Huevos Rancheros fan?

Mexican flavor is definitely my go to. You can’t go wrong with it in my opinion. These not only sound delicious they look super fun in there little cups!
thanks! The little cups are super cute and a great way to portion control
Definitely going on my meal plan for next week–I had something like this at a coffee shop in St. George last year and liked it so much had it for breakfast everyday I was there!
Oh thanks friend! I ate them for 3 days in row this week. Easy and delicious hope you enjoy
Yum! These look adorable and sound amazing. Do they reheat well??
They are not as crispy if you reheat them . The eggs hold up very well like a little quiche. I made a batch and ate them for 3 days and was very happy
Yes to Mexican food all the time! What a great idea, can’t wait to give them a try!
Thanks! Hope you enjoy
Mexican food is the best! I would never have thought to add a tortilla to egg muffins before.
The tortillas are a fun way to mix it up and hold the together
These are so cute! Perfect for a quick breakfast or Cinco de Mayo party 🙂
Thanks! Hope you try them out
I could eat Mexican 24×7. This has me drooling wayyyy earlier than I’d normal think of food. 🙂

What a great idea! I can see bringing these to work this week for our “associate appreciation breakfast”!
Oh I bet they would go over well for that!
You might be surprised but I can easily make this vegan! It sounds good and simple (my favorite)!
I love when you say that! 🙂
I’m always in the mood for Mexican food and these look so fun! Perfect for an appetizer or meal. Love how you used the corn tortillas!
Thanks! I was surprised by how well the tortilla did. I wasn’t sure!
This is my favorite breakfast dish! Thanks for sharing!!
Thanks so much for checking it out
This looks soooo good! I could totally eat Mexican food all the time too.
Thanks me too!
I love huevos rancheros!! The flavors just can’t be beat 🙂 Thanks for sharing!
These look super easy to make! I made some nice vegan sweet potato burgers last night, soup and a port loin dinner – meal prep went well this week!
I’ve made the little egg muffins in my small muffin pan before and loved them. Will have to try with tortillas!! Yum!!
These are perfect for an on the go breakfast! Love the flavours in this recipe
Thanks so much!
Girl, we are totally on the same page with cheesy eggs (and all the extras)! Honestly, I love all the ingredients (thanks SOOO much for not including black olives BTW),but I don’t think I’ve ever had actual huevos ranchos before. I think I might try these tonight! 😉
I am not an olive person at all either. Something about the texture. Hope these are a hit at your house
My dad would be all over these. Will have to make them for him soon!
Oh that would be great I hope he enjoys them
Sold! Pinned this to make later in the week! I love doing mini quiche in a muffin tin, but these look awesome and a good way to use up my extra homemade salsa.
Fabulous! Hope you enjoy
What a great idea! They looks so crispy!
Thanks they did turn out nice and crispy. Any excuse for more avo and salsa
I will pass on this recipe to my son who loves egg muffins.
Thanks for hosting.
Great thanks a bunch!
That does sound good & easy! Sadly there aren’t any good Mexican restaurants up here. We miss our Tex Mex. And I love Migas!
We have a few ok Tex Mex places but I do like to make my own healthier versions too.
I love coming up with new and different ways to use my muffins pan. Love this idea!
I do too! Thanks so much hope you enjoy them
Such a tasty breakfast for meatless Monday! Love how they’re served in tortilla cups for portability!
Thanks so much! Portable indeed
This is one of my favorite brunch dishes! Love this idea to use them in a muffin tin!
Thanks hope you give it a try for brunch sometime soon
One more reason to make these: they are cute. I’m thinking they could work well for a lunch or snack as well as a breakfast.
Well I have now eaten them for breakfast, lunch and dinner!
One more reason to make these: they are cute. I’m thinking they could work well for a lunch or snack as well as a breakfast. You’ve been so faithful about doing Meatless Mondays for so long. I wonder how many tons of carbon emissions have been prevented by people making one of your vegetarian recipes instead of eating something very climate-unfriendly like beef?
Well I have no idea! But thanks for the encouragement
These are adorable… would be great for a brunch set-up!
Thanks! I totally agree 🙂
My husband always order huevos rancheros when it’s on the menu – regardless of the time of day. When you spray the tortillas, which side are you spraying — or do you spray both sides?
I spray both sides. One side so it doesn’t stick and the other side will get crispy
I’ve done this in a muffin paper liner but never with a tortilla! Something to try, especially if it can add some extra carbs for the kids.
Yes the kids should love it!
I thought Cinco de Mayo was every single Friday? That or I need to find a new place to hang out other than Mexican restaurants every weekend. These look delicious, pinning for later!
Sure I am on board with that! Thanks
Those look delicious!!!
I love good breakfast options, and I haven’t seen theses done before. Yum!
Thanks so much maybe your boys will like them too
These are so fun looking! The tortilla shell almost looks like a flower when it’s cooked this way – I love it. I’m a fan of huevos rancheros, but if I’m going out to breakfast I’m almost certainly getting eggs benedict or pancakes. They’re my fav brunch treats!
Also fabulous choices!
These are so great for grab-and-go meals and snacks. And packed with protein!
Thanks yes protein packed goodness
These look so good and I am such a big Mexican food fan!
Me too! Thanks
I love how easy this is to make. Great idea for a brunch menu.
Could not be easier!
Yum, Deborah! I wish I could make these but the corn tortillas that we have here in NL are just crap 🙁 Also we don’t have a lot of restaurants where you can order breakfast so that is a tough one to answer! But, if I’m in the States and say, I’m visiting my parents in New Mexico, I would most definitely eat something like huevos rancheros! anything spicy and eggy and sausagy!!! Otherwise I like the old pancakes, eggs and bacon, simply because I cannot get them here (and if I want them at home I have to make them myself …).
We might have to send you some tortillas!
I could eat Mexican all day, every day! These look so yummy
Me too for sure! Thanks
That looks like it would be a great breakfast for when company is over 🙂
yes indeed!
This is my favorite breakfast dish! I can not wait to try this quick & easy recipe!!
Mine too! Hope you enjoy them
What a beautiful and colorful dish! I’m a firm believer in the more colorful a dish is, the tastier, and usually healthier, it will be.
Sounds good to me!
My mouth is totally watering! Can’t wait to kick off Cinco de Mayo celebrations with these!
Thanks so much! One of my new favorite breakfasts
