Oatmeal bakes are my go to fuel on run and race days. Filled with good for you oatmeal with a seasonal splash of pumpkin, this baked oatmeal is the perfect pre or post run breakfast. A healthy dose of protein and an adequate mix of carbs that is easy to prep ahead in minutes.

Feeling a little nutty? This Peanut butter oatmeal bake is my most saved recipe. Find out why everyone loves this easy peanut butter and chocolate oatmeal bake.

This high protein, veggie packed egg casserole is easy to make ahead and heat easily. The Spinach and goat cheese bring the flavor and the butternut squash offers up some healthy carbs to balance it out. A fan favorite.

4 ingredients and 10 minutes to these satisfying, high protein breakfast Taquitos. Can be made in advance and warmed up for on the go breakfasts.

Skim milk, eggs, and protein powder give these tasty waffles a nice nutrition boost. Top with Greek yogurt, fruit or enjoy on their own. Make ahead, freeze and warm up in the toaster when needed. Warning: they are delicious.

    The squash, spinach and goat cheese casserole! I love a hearty breakfast. This one is so easy to make and you can keep it in the fridge for several days.

    These look great! I think I’ll need to give those pancakes a try. I’ve been relying on smoothies alot on busy mornings but its gonna be too cold for them soon.

    Waffles always sound good to me! Although these days the runs aren’t long so simple sourdough toast with ghee & honey or a sprouted english muffin with the same tend to be my go-tos.

    Yum. We all eat different breakfasts here, and lately, I’ve been snagging eggs from the farm where I work for myself. No one else here will eat them (because they don’t know what they’re missing). I should prep ahead and make something we can all eat from during the week.

    It’s amazing how I forget about these healthy options! I love the egg casserole!
    I love that it has a lot of protein, but the squash has a good dose of carbs, too. Just the right pre-run breakfast.

      I am all about a big dowse of protein at breakfast or I can’t get it all in. Also like to get my carbs from veggies. Glad I gave you some good ideas
