Cinquo Vegetable tacos & Homemade salsa #Cinquo de Mayo

Here is an quick and easy Cinquo de Mayo inspired Veggie taco dinner. You probably have most of these ingredients on hand. My daughter whipped up this easy homemade salsa to go with it.

Cinquo Vegetable tacos
Cuisine: Mexican

Prep time: 10 mins
Cook time: 20 mins
Total time: 30 mins
Serves: 2-3
super easy & health 5 veggie taco dinner
Ingredients
  • 1 sweet potato-diced
  • 1 zucchini-diced
  • 1 can black beans 15 oz. rinsed & drained
  • 1/2 onion diced
  • 1 cup frozen corn
  • 1 package corn tortillas
  • avocado & fresh cilantro to garnish
Instructions
  1. Saute sweet potato in olive oil until tender about 10 min
  2. Add in zucchini and onions and saute another 10 min
  3. stir in corn and black beans
  4. season with salt, pepper, chili powder as desired
  5. Serve on corn tortillas
  6. garnish with avocado, cilantro and salsa

Cinquo de Mayo salsa

super easy homemade salsa
Ingredients
  • 1 jalapeno pepper
  • 1/2 onion
  • 6 compari or Roma tomatoes
  • 1 can 15oz. diced tomatoes
  • handful fresh cilantro
  • squirt of lime juice
  • chili powder, salt, tsp sugar, tsp cumin
Instructions
  1. throw all ingredients into a blender or cuisinart and pulse. Enjoy!

    Ohh… that looks delicious! For some reason, I never would have thought to combine zucchini and sweet potatoes.

    I’ve just started cooking with sweet potatoes in recipes and I love them! This combination sounds great, although zucchini is on my husband’s “do not eat” list. 😉

      you can totally sub the zucchini for squash or red peppers too. It’s so easy and the sweet potatoes make it really filling and delicious! Thanks for stopping by!

    Oh man, that sounds so good! I have been loving the Spanish food lately, and didn’t even realize until partway through the day that it was Cinci de Mayo! It was quesadillas for me today but later on in the week I’ll have to make me these tacos!
