Thanks for joining Sarah and Me for Meatless Monday today. There is a salad place I frequent with my run crew which has all kinds of creative made especially for you fantastic salad blends. Do salads always taste better when someone else makes them for you? Not this time! I have figured out how to make this oh so yummy Mexican Caesar Salad in just 5 minutes. Trust me 5 minutes the most perfect salad for lunch or dinner.

5 Minute Mexican Caesar Salad

As with many salads, one of the keys to fabulous tasting salad is the dressing. This Mexican Caesar dressing is whipped up in your blender in 30 sec. Greek Yogurt gives a nice creamy base that is blended with some canned Chiles in Adobe sauce, fresh lime and a dash of salt. That’s it!

The base of this Mexican Caesar salad is nice crunchy Romaine lettuce however it would be great with a blend of little kale as well. Next I’ve added in some of my favorite Southwestern tastes. Black beans, corn, avocado and cilantro are piled on. I add a hard boiled egg for a little more protein.

5 minute Mexican Caesar

Pieces of your favorite corn tortilla chips are sprinkled in with a some Cotija cheese. Cotija cheese is kind of a cross between a feta and a Mozzarella cheese. It has a salty and crumbly texture that holds up well in a salad and brings a ton of flavor. It’s normally used on a Mexican Street Corn dishes.

My 5 Minute Mexican Caesar Salad could not be easier and really does take only 5 minutes to prep. Perfect for lunch or dinner. If you do plan to make it ahead to take along to work, I would reserve the dressing on the side until ready to enjoy. That will keep the lettuce nice and crisp.

Mexican Caesar Salad

Ingredients

  • Dressing:
  • 1 C plain Greek Yogurt (1% or 2%)
  • 2-3 Chipotles in Adobe sauce
  • juice of one lemon
  • sprinkle of salt
  • You will have left over dressing
  • Salad:
  • 4 cups of chopped Romain lettuce
  • 1/2 C black beans
  • 1/3 C canned corn
  • 1 hard boiled egg-chopped
  • 1/4 Cup Cojita cheese
  • handful of tortilla chips broken
  • sprinkle of fresh cilantro
  • 1/2 Avocado
  • 1/4 c grape tomatoes

Instructions

  1. Pulse dressing ingredients in blender until smooth
  2. Mix all salad ingredients together
  3. Drizzle on desired amount of dressing
  4. Reserved dressing can be kept in fridge for later use

    I love the flavors you added to this salad! Did you know the Caesar Salad was created in Mexico? I was once at the restaurant in Tijuana where it was first served.

    This has me seriously missing Mexican food!! I’ve only had it a handful of times since getting pregnant as avocado and beans don’t agree with me and in general. Soon I will be reunited!

    Sounds delicious! The chilis in adobo are such a great way to up the flavor in things. I’ve never tried it in a dressing before though.

    This has all the yummy things! Nothing beats a big salad with lots and lots of delicious “stuff” in it. I can load an entire serving bowl with all kinds of veggies and toppings, healthy and not, and will pretty much have no regrets.

    I have to admit lunch is not my favorite meal. I often just eat tuna fish or egg salad. Your salad sounds like the perfect answer to being in a lunch rut!
