Happy 2016 Meatless Monday lovers! I just returned from a 2 week vacation where I was really missing all of my home cooked veggie goodness. I don’t know about you but I am excited to get back to my regular routine and healthy eating schedule. I find it really hard to eat out for so long and I have been craving my veggies cooked my way. I needed something quick and easy for this week so I whipped up these Tofu Veggie Lettuce Wraps with a spicy peanut sauce in a just few minutes yesterday. Tina and I are glad to have you for Meatless Monday today!
I certainly over did on the carbs the last few weeks and I was looking for something a little lighter today. I used Cauliflower rice in this dish to lighten it up a bit and honestly did not miss the rice at all. I had this whole meal prepped and ready in under 30 minutes-perfect for an easy weeknight dinner.
Tofu Veggie Lettuce Wraps
Ingredients
- 3 cups shredded cauliflower (for the "rice")
- 1 14 oz package tofu-drained & diced
- 1 C portobello mushrooms-diced
- 1 red pepper-diced
- 1 onion chopped
- 4 celery stalks
- 1 C shredded carrots
- 1 tsp ginger
- 4 large lettuce cups (wraps)
- for the sauce:
- 4 Tbsp peanut butter
- 1/4 C rice vinegar
- 1 Tbsp siracha
- 1 Tbsp chili garlic sauce
- 1/4 c water
- 1 Tbsp chopped garlic
- toppings: chopped peanuts, cilantro
Instructions
- Shred Cauliflower and set aside
- Saute onion, ginger, celery, carrots, peppers and mushrooms until soft about 5 min
- add tofu
- Meanwhile mix all ingredient for the peanut sauce in a small bowl
- Add sauce to mixture & combine
- Add cauliflower rice
- Scoop into lettuce wraps
- Sprinkle with peanuts, siracha and cilantro

Cauliflower rice sounds like a great alternative. I totally overdid everything on vacation, especially sweets. We did make some great meals in the kitchen of our condo, though. That was nice. Trying to eat out with a 3 year old and a 10 month old all the time would have been a disaster. Welcome back and happy New Year!

After seeing all the pictures of your vacation I want a vacation! They do make frozen Pitaya packets but they don’t sell them here. I could order them online but I haven’t broken down to do that so instead I have made other frozen fruit bowls. I have tried to make smoothie bowls with dried dragon fruit but that wasn’t as good so like I said I stick to other ones like acai or other frozen fruit smoothie bowls.
These lettuce wraps look delicious, can’t wait to try them! I am really craving some healthy eats! The hard part for me came between New Years Eve and yesterday and that is where I gained my weight and started feeling like crap, before that I was doing great surprisingly.
While I am sad to see Tina go I’m excited to co host Meatless Monday with you!

We had our first normal, home-cooked meal in like two weeks last night and it was wonderful LOL! With all the parties and events and running around, the menu gets crazy.

I should lie, but I hear the word Tofu and it just scares me. Years ago someone at work brought a tofu burger in and didn’t tell anyone, they were terrible, about half the room was spitting it out into the garbage I couldn’t even swallow. Clearly they weren’t a cook, and they told us after they had just picked them up from some Whole Foods Store and figured no one would notice, LOL
However, the rest of this looks fabulous, never would have thought about using Cauliflower like a rice and who doesn’t love a great wrap!

ha ha you are too funny! I promise the tofu won’t kill you but you could use another protein if you wish. Grating up cauliflower is a great sub for rice. It’s really filling.

Ha ha don’t fear tofu it’s really easy to work with and takes on any flavor. You could also use any protein in here really though. Have a great week!

Oh my no my husband is a total carnivore! My son will eat some of my foods. I am embarrassed to tell you that I often make 2 dinners. Sometimes they will eat my veggies as a side.

They are very high in protein and nutrients and very low in carbs. I don’t count calories but I know they are super healthy and I hope you enjoy them
