Thanks for joining Sarah and me for Meatless Monday today. Just when you think you can’t possibly have enough muffins recipes, I am here to tell you that you don’t want to miss this one. These Oatmeal Banana Pumpkin Muffins are full of all the good stuff without any added white sugar or white flour. They are my new favorite!
Oatmeal Banana Pumpkin Muffins
I knew I wanted to make a “healthier” muffin and get rid of the white flour and white sugar without sacrificing taste. After some trial and error with oatmeal, I discovered that I could pulse it into a flour with some flax seeds. It worked perfectly and my muffins were now gluten free as well.
The flax seeds and the walnuts offer a nice boost of healthy Omegas. I cut the sweetener down to just a 1/3 Cup of pure maple syrup for the entire 12 muffins. Ripe bananas and canned pumpkin offer up enough natural sweetener. Chocolate chips are optional but I’d go for it.
These Oatmeal Banana Pumpkin Muffins can easily be individually wrapped and frozen for later use. They make a fabulous post workout snack or light breakfast. I am also a fan of enjoying them with my afternoon coffee. You may also like Espresso Blueberry Oatmeal bites.
Prep time is a quick 10 minutes and these muffins are ready for the oven. I bet you even have most if not all of the ingredients on hand. I am all about baking with real ingredients that I can feel good about putting into my body. Hope these Oatmeal Banana Pumpkin Muffins sound good to you too!

Oatmeal is great in muffins! Hope you try them out
I’ve had to start buying more bananas to have enough to make my baked oatmeal and muffins. This is a great recipe.
These look so yummy!
Oatmeal and banana is always a win!
Thanks I really liked the texture of the ground oatmeal
I love throwing oats into my blender to give a quick pulse into a flour. So much cheaper than buying oat flour!
Definitely less expensive and so easy to do. I really liked the texture
These look really good. I’ve never actually made muffins before!
What really?! You must make them this week asap! 🙂
You post the most delicious recipes. These have all my favorite things.
If only, I had the time and ambition to make them.
These are so easy and really just take a few minutes to prep. You can do it!
These look so tasty! I love how you made the flour. And pumpkin and banana probably makes them super moist.
Yes I worried they might be dry and was pleasantly surprised by the texture. The oatmeal is so easy to ground up and I can’t believe I had not thought of it before.
Oh yum yum yum on these! All kinds of tasty ingredients. I never would have thought of pulsing oats into a “flour.”
When I tried just using the oatmeal as is-they were too dense pulsing them makes a much better texture and so easy to do
What a great combination!
Thanks I went through a couple different recipe changes but these are a winner!
I am in LOVE with everything about these muffins! Cant go wrong with this combo
Well thanks so much!
i love adding mashed bananas to the muffins. these look lovely for snacking.
Thanks so much one of my faves I’ve ever made
You can never have to many muffin recipes and this looks delicious. I am always on an endless quest for uses for my overripe bananas!
I know they are green for so long and then all of the sudden too ripe!
I am such a muffin fan, especially when they are this easy to make! Such a great idea!
Me too and thanks so much!
Oh, yum! I like the sound of these! We are having a hard time keeping bananas around long enough to ripen for baking so I may have to snag some extras.
I seem to have the opposite problem with my bananas!
These muffins look absolutely amazing! I love how moist bananas make breads and muffins too. I can’t wait to try these!
thanks so much hope you enjoy them as much as I did!
Thank you for sharing this! I’ve been looking for a healthier muffin option and I’m definitely saving these to make this weekend!! <3
Fabulous I really hope you enjoy them!
Y. U. M!!! These look really similar to muffins I made the other day!
I love making big batches and freezing some for later!
they do freeze really well!
I love having a muffin in the morning with my coffee. Especially when it’s loaded with healthy goodies like these beauties are. It’s a perfect combo for perfect start of the day. I love this recipe. Will definitely give it a try.
Thanks so much! Hope you do give them a try
I woke up craving healthy muffins this morning, so I just whipped up a batch myself that included flax. And oats are always a go-to ingredient of mine in pretty much any baked good. So wholesome and filling!
They sure are and the flax seeds are easy to throw in without really tasting them
