Pumpkin Spiced Banana Oatmeal Bake
I am a huge breakfast person. In fact, I could eat breakfast at every meal. I digress…I have long been a fan of healthy breakfast bakes. Why? They are easy to prep in advance, easy to reheat in the morning, and filled with good for you oatmeal to fuel your body.
What are the ingredients?
Rolled oats, pumpkin puree, eggs, and milk of your choice are the main ingredients. I also add a scoop of vanilla protein powder to bump up the protein. In addition, cinnamon, nutmeg, and pumpkin spice bring in the cozy fall flavors and will make your kitchen smell delish.
Can I make this advance?
Yes! I do it weekly. I suggest baking up your batch and then cutting it into equal portion sizes. Refrigerate for up to a week. Simply pop it in the microwave for about a minute to heat when ready. Super easy prep and perfect for a busy morning.
Are there any additions or Substitutions?
Looking for a little sweetness? Add a sprinkle of mini chocolate chips or a drizzle of maple syrup on top. Feel free to substitute any milk of your choice instead of skim milk.

The benefits of oatmeal are plentiful. It’s gluten free, a great source of fiber, and offers a very filling, heart healthy breakfast. The pumpkin puree has a great dose of vitamin C. Eggs, milk, and protein powder really up the protein and nutritional value. You really can’t go wrong in serving this Pumpkin Spice Banana Oatmeal Bake for breakfast. I have not added any sugar at all or any sugar substitute to this recipe. If you prefer a sweeter taste, I suggest a drizzle of maple syrup.

Pumpkin Spiced Banana Oatmeal Bake
Your favorite breakfast gets a fall update with this easy and healthy Pumpkin Spiced Banana Oatmeal Bake. High protein, low fat and easy to make ahead.
Ingredients
- 2 Cups of rolled oats
- 2 Cups of milk of choice
- 2 Eggs
- 1 1/2 Teaspoons baking powder
- 1 Teaspoon salt
- 2 Teaspoons vanilla
- 2 Teaspoons cinnamon
- 2 Teaspoons pumpkin spice
- 2 scoops protein powder (optional)
- 2 ripe bananas-sliced
- 15 oz can of pumpkin puree
Instructions
- Preheat oven to 375 degrees
- spray a 8 x 10 casserole dish (or pie pan) w cooking spray
- In a large mixing bowl add: oats, milk, eggs, baking powder, salt, pumpkin spice, salt, vanilla and cinnamon
- mix to combine
- fold in pumpkin puree
- place banana slices into the bottom of the baking dish
- pour on the oatmeal mixture
- sprinkle some cinnamon on top
- bake for 30 min
- do not overcook!
- Cool and cut into 4 portions
Notes
this is a great make ahead recipe. Can easily be warmed up and reheated in microwave for breakfast

Yes it would be easy to take along and heat up in the microwave. If you like a little sweetness, a drizzle of maple syrup is good
