Thanks for joining me and Sarah for Meatless Monday today! In celebration of Pi Day tomorrow, I naturally had to post some sort of pie today right?! I knew I wanted to do something healthy, family friendly and easy but wasn’t sure exactly what. I have seen these Timabale type pies in magazines but had not yet made them. Turns out they are easy as pie! Hope you enjoy my healthier take on Pi day today with this Penne Primavera Pie.
I’ve used Penne for this Pie today however you can use spaghetti or any gluten free substitute that works for you. I am excited that the spring veggies are starting to come out and thought this pie was the perfect way to load them all up into one meal. You will find this pie is loaded with asparagus, peas, zucchini and red peppers. Also a great way to hide some of them from the kiddos. I don’t like to advertise this on Meatless Monday but you could also add another meat protein into the mix. Shh don’t tell anyone I said that! 🙂
I found it really easy to use a springform pan to make this Penne Primavera Pie however I bet it would also turn out great in Bundt pan. Just use a little cooking spray on the bottom and you are all set. So how do you make this delicious pie for yourself? Let’s get right to it.

Tell me-How will you be celebrating PI Day? Have you ever made a pasta pie?

I love the idea of a penne pie, especially with all the veggies that are in there! I would usually add meat to something like this but it looks like it would be good and filling even without it- plus Ive been on the lookout for meatless meals to eat on Fridays during Lent. Thanks for sharing!
Great I hope it works it out for you all!
I don’t even need the pasta–just get me a spoon! Thanks for the linkup!
ah thanks! hope you give it a go
YUM! I’m celebrating PI today, but just trying to stay warm and prepare for the blizzard that is going to come barreling through the east coast. It is going to be a mess. Can you save me a slice? xoxo
I think everyone is getting it this week! Enjoy
I’ve not made a pasta pie but this one looks so colorful and tasty! It’d be so pretty at a party. No clue what the pi day festivities here will be just yet.
It could be pretty for a party too!
That looks beautiful! And I’m sure it tastes as good as it looks.
thanks so much!
What a unique way to serve penne – i love it! I also love that it’s full of veggies as well.
Thanks so much thought it was a fun way to mix it up
Yum!! I love pasta and zucchini!! I’m glad I love vegetables now more than I did in my younger years. Thank you for sharing!
Thanks hope you give it a try!
This looks yummy (but I’d have to add some meat LOL). Pi Day is also my Bday 😉 care to run 3.14 (virtual) miles with me?
OH I knew it was this week but wasn’t sure which day! Hope you have a fantastic birthday and that the snow does not mess up your plans too much
Haha cute pi day pie! Looks delish too.
Thanks so much!
YUM! What a delicious recipe idea. It really elevates the pasta!
It’s more fun for sure
I need to sneak veggies into my HUSBAND’s food! This looks great. Thanks for hosting.
I wish I could sneak more veggies into my husband’s food too!
What a great idea! Funny enough, I didn’t even realize tomorrow is pi day and it’s my daughters birthday, haha!
well that is more important! Happy birthday to her hope the snow doesn’t mess up her plans
All the veggies! Nothing better than pasta and veggies together!!
definitely a great combo!
YUM! Mu kids will love this! What a creative idea!!
Oh great hope they do!
I think that would be cool in a bundt pan- I haven’t made a pasta bake like this in a long time- thanks for the suggestion!
FAbulous let me know how it comes out
That really does look fantastic! I saw your post last night and couldn’t wait to read it as the picture just looks so yummy! Funny that it’s Pi day tomorow – I may a taco pie for us for dinner tonight – although it’s not quite as healthy. 🙁
That sounds good too!
This looks so good I love the zucchini on top and all the veggies you have packed in there! Happy Meatless Monday!
Thanks Sarah have a great day
This looks so good! I totally forgot is was pi day tomorrow and I love this take on it – though I’ll probably go with a dessert pie at my house tomorrow because I’ve got such a sweet tooth! 😉
I wont’ tell anyone! 🙂
Looks delish! I’ve never thought of adding peas to my pasta…
Oh it’s a great combo!
Never have made or seen a pasta pie! Interesting! I’m actually running a 5K fun run tomorrow with a local running store and there’s a slice of pie for everyone at the end of the run, with the chance to win an entire pie from a raffle!!
Now that sounds like something to run for!
Happy Pi Day! A few years ago, I hosted a Pi Day Party – all guests brought a different pie….it was a lot of pie. But this looks so tasty! Love that you put green peas into it.
Oh that sounds like so much fun! I am going to remember that for next year
This looks amazing!! I love adding roasted vegetables to my pasta dishes!!
Thanks! Me too!
Dang … I shouldn’t have come to read your blog while hungry. No dinner for me for another hour waiting to pick up kids :/
ha ha sorry not sorry 🙂
What a fun way to have pasta!
Thanks so much!
Oooh! This looks amazing! I need to try it out with my nomato sauce!
let me know how it goes
How pretty is that! My mom makes a “cake” out of penne and ricotta, but this is a nice way to mix things up with the addition of veggies! I’m going to suggest it to her.
I like the ricotta as well good idea
This sounds so tasty! I never made a pasta pie. I didn’t even take notice that it was Pi Day!
I kind of remembered at the last minute
What a cute Pi day idea. Will you be making this tomorrow?
No actually I am out of town!
Healthy and yummy! Got to love it 🙂
Thanks so much!
This is genius and sounds delicious! I am not coordinated enough to get this together specifically on Monday but I will definitely add this to the menu.
Great thanks hope you like it 🙂
Yummy. How do you cut your zucchini like that? Maybe you have a bigger knife than I do?
Yes you do have to use a sharp knife and cut it very thin
This looks SO AMAZING!!!
thanks so much
I love the idea of making this in a springform pan or bundt- The layers are so pretty that way- great veggie packed dinner!
I thought it was fun too!
Loaded with veggies and color. Another great recipe. And pies are always fun!
Thanks so much Chrissy
This is a great idea! I always forget its Pi Day until the actual day. Doh! Guess I’ll do my usual 5K to celebrate.
I usually do not observe it but hey why not!?
That pasta pie looks so delicious! If I could have one in front of me right now I’d eat it all up!
oh good that was the idea!!
That looks delicious! I don’t think I’ve ever tried pasta in pie form. I’m surprised it doesn’t need an egg to hold it together. I guess the cheese provides enough sticking power 🙂
Yes exactly! The cheese holds it together super yum 🙂
wow, the dish looks so delicious. I will ask my wife to make it at this weekend. Thanks for sharing!
Thanks hope you both enjoy it!
This looks amazing! I am pinning it to make later this week!!
fabulous hope you enjoy it!
This looks so delicious! I saw it on instagram! I def want to try it!
Thanks so much hope you enjoy it
Happy belated Pi day! This looks delicious! Such a creative recipe 🙂
