Thanks for joining me and Sarah for Meatless Monday today! In celebration of Pi Day tomorrow, I naturally had to post some sort of pie today right?! I knew I wanted to do something healthy, family friendly and easy but wasn’t sure exactly what. I have seen these Timabale type pies in magazines but had not yet made them. Turns out they are easy as pie! Hope you enjoy my healthier take on Pi day today with this Penne Primavera Pie.

I’ve used Penne for this Pie today however you can use spaghetti or any gluten free substitute that works for you. I am excited that the spring veggies are starting to come out and thought this pie was the perfect way to load them all up into one meal. You will find this pie is loaded with asparagus, peas, zucchini and red peppers. Also a great way to hide some of them from the kiddos. I don’t like to advertise this on Meatless Monday but you could also add another meat protein into the mix. Shh don’t tell anyone I said that! 🙂

I found it really easy to use a springform pan to make this Penne Primavera Pie however I bet it would also turn out great in Bundt pan. Just use a little cooking spray on the bottom and you are all set. So how do you make this delicious pie for yourself? Let’s get right to it.

Penne Primavera Pie

Ingredients

  • 1 box of Penne (or gluten free sub)
  • 2 C tomato sauce
  • 1 C frozen green peas (thawed)
  • 1 large red pepper-diced
  • 1/2 onion diced
  • 2 large zucchini-thinly sliced
  • 3/4 C grated Parmesan cheese
  • 1 C shredded Mozzarella cheese

Instructions

  1. preheat oven to 375
  2. Cook pasta according to directions on the al dente side
  3. drain and rinse w cold water
  4. Meanwhile line peppers and zucchini on a baking sheet
  5. sprinkle with salt, pepper and olive oil and roast for 10 min
  6. In a large bowl combine pasta, sauce, roasted peppers, peas, onion
  7. Add in Parmesan cheese and half of Mozzarella cheese
  8. Using a springform pan spray with cooking spray
  9. line bottom of pan with a layer of zucchini
  10. Pour in pasta and veggie combo
  11. Push down w a spatula to create a flat top
  12. sprinkle remaining cheese on top
  13. Layer with remaining zucchini
  14. Bake for 30 min
  15. Allow to set for 5 min before cutting

    I love the idea of a penne pie, especially with all the veggies that are in there! I would usually add meat to something like this but it looks like it would be good and filling even without it- plus Ive been on the lookout for meatless meals to eat on Fridays during Lent. Thanks for sharing!

    That really does look fantastic! I saw your post last night and couldn’t wait to read it as the picture just looks so yummy! Funny that it’s Pi day tomorow – I may a taco pie for us for dinner tonight – although it’s not quite as healthy. 🙁

    This looks so good! I totally forgot is was pi day tomorrow and I love this take on it – though I’ll probably go with a dessert pie at my house tomorrow because I’ve got such a sweet tooth! 😉

    Never have made or seen a pasta pie! Interesting! I’m actually running a 5K fun run tomorrow with a local running store and there’s a slice of pie for everyone at the end of the run, with the chance to win an entire pie from a raffle!!

    Happy Pi Day! A few years ago, I hosted a Pi Day Party – all guests brought a different pie….it was a lot of pie. But this looks so tasty! Love that you put green peas into it.

    How pretty is that! My mom makes a “cake” out of penne and ricotta, but this is a nice way to mix things up with the addition of veggies! I’m going to suggest it to her.

      Yes you do have to use a sharp knife and cut it very thin

    That looks delicious! I don’t think I’ve ever tried pasta in pie form. I’m surprised it doesn’t need an egg to hold it together. I guess the cheese provides enough sticking power 🙂
