Thanks for joining me and Sarah for Meatless Monday today. I am continuing on my quest to eat seasonally fresh fruits and veggies and what is better right now than summer peaches and tomatoes? Nothing I tell you! There are so many variations on Gazpacho but after I saw such delicious looking peaches, I knew they would be perfect to add to this refreshing meal. To me, Gazpacho is just “summer in a bowl” I hope you enjoy my take on Peach Gazpacho.

Peach Gazpacho-Summer In A Bowl

I wanted to balance out the sweet peaches and tomatoes with a little spice so I added a jalapeno for just a touch of spiciness. With every bite you taste a little sweet, a little spicy and a dash of salt. The perfect combination in my book.

Peach Gazpacho

There is nothing more refreshing on a hot summer day than a nice cold bowl of Peach Gazpacho. Trust me when I tell you that you can whip this up in under 10 minutes using a food processor or blender. I’m in love with my Ninja blender-it does everything! (Amazon affiliate link)

If I have not sold you yet, this Peach Gazpacho only has 5 ingredients and they are all fruits and vegetables. Low calorie and full of vitamins makes it a win to me. It’s perfect for lunch, a side dish or a post run snack. Naturally vegan, gluten free & dairy free-everyone’s happy! What are you waiting for? Grab your spoon 🙂

Peach Gazpacho

Ingredients

  • 4 ripe peaches (peeled)
  • 2 yellow tomatoes-halved
  • 1 yellow pepper (seeded)
  • 1 cucumber (peeled)
  • 1 jalapeno pepper (seeded)
  • 3 Tbl apple cider vinegar
  • kosher salt & pepper to taste

Instructions

  1. Put all ingredients into a blender and pulse until desired consistency
  2. Serve chilled

    I think I’ve only had gazpacho once, but I remember liking it. This sounds like a good combo with the sweet and spicy. My mother in law loves peaches, I should send her this recipe!

    Gosh that looks refreshing! I’m having issues with peaches this summer. They’re rotting before they ripen. I buy organic, and I’ve never had this issue before! Any tips?

      I have never had that happen to me before! I actually have been buying the local peaches and they are not organic.

    This really does sound like Summer in a bowl! I love gazpacho but I’ve never made one with peaches, I’ve just stuck with the traditional recipe.

    #trueconfession I have never tried gazpacho…cold soup kinda doesn’t sit right with me LOL But, I do love peaches, so I might give this a try #staytuned 😉

    What a creative twist on the traditional gazpacho recipe. I’ve never thought to make it without using tomatoes as the base.

    Just yesterday the gal who cut my hair gave me a bunch of peaches, I may have to try this. I almost have all the ingredients, I’ll have to see if the grocer has yellow tomatoes in!
