Happy Meatless Monday! Thanks for joining me and Sarah to celebrate all the fruit and veggie goodness today. After such a rainy, cold start to our spring and summer, it has really gotten quite hot and humid out there. Sometimes you just want something to cool you off after a long run or busy day with the kids and I’ve got just the snack-Granola Parfait Pops.
I often eat Greek Yogurt with granola and fruit for a pre or post workout snack and I thought, why not freeze it all and make a fun summer treat? I can’t believe I didn’t think of making these Granola Parfait Pops sooner. This recipe could not be easier and you most likely have all the ingredients right on hand.
I used a strawberry Greek Yogurt but any flavor will work. Couple that with your favorite granola, a little honey and strawberries and you are ready to “pop” them in to the freezer. A few hours later, come home to the perfect summer treat. I found these easy reusable popsicle molds right on amazon. (affiliate link)

Ingredients
- Popsicle mold for 6 pops
- 3-4 containers (6 Oz.) of Greek Yogurt of choice
- 2/3 C granola
- 2 teaspoon of pure honey
- 6 strawberries sliced
Instructions
- Mix honey into granola and set aside
- Carefully spoon granola mixture into top of each mold
- Add in Greek yogurt
- Slide in sliced strawberries
- Freeze at least 2 hours
- To remove pops: run under warm water for a few seconds and carefully pull stick out of mold
- Enjoy!

As I sit here at 5 am, it’s already 90 degrees on its way to 123 today, so I want ALL the cold food. Thes look fun and delicious and easy to make “my way.” 🙂

Oh my goodness these popsicles look AMAZING!! I would have never thought to add granola to them, that’s genius!! I can’t have dairy, but I will definitely be trying this with my dairy free yogurt because it would be the perfect post run snack!

YUM! We haven’t made these since last summer and are really slacking on the popsicles. I pulled out the popsicle maker a few weeks ago and the ones I made are still sitting in there.
I’ll have to see if A wants these this week for breakfast. She has gymnastics camp all week (plus soccer) and she was up 2 hours early this morning all ready to go. Than she didn’t want to eat. She finally wanted oatmeal and even being as hot as it is I made it and she ate 2 bites! Maybe I’ll even make these for when she gets home.

OMG, you are a genius!!!! I would never have thought to freeze yogurt into a popsicle mold. I wonder if you could mix the granola into the yogurt before freezing(?)

These are the prettiest pops I’ve ever seen!
So I made some fruit pops last week with the kids… they were really good in the blender. But as frozen treats, not nearly sweet enough. I think I need to work on my popsicle making skills. 🙂
