This is one of my favorite salads that I make over and over again. It’s perfect for the summer season so I am sharing it again today! It takes just minutes to create and is perfect for lunch, dinner, or weekend BBQs. While tabouleh is typically made with bulgar wheat, I like this lightened-up no-cook summer version wth cauliflower. It really may be the miracle vegetable after all. Enter this super delicious Cauliflower Rice Tabouleh Salad.
Cauliflower Rice Tabouleh Salad
I was craving the fresh tomatoes I had just picked up at the market. This time of the year, they don’t need much sprucing up. What’s not to love about the simplicity of Tabouleh with just olive oil, lemon, fresh parsley, and mint to dress it up. Add in some fresh cucumber and you’ve got a delicious side or main salad.
What do I need to make this salad?
This cauliflower rice tabouleh salad is one of those salads that looks like it took a lot of prep when, in fact, it took under 10 minutes. These 6 ingredients are all you need:
Riced Cauliflower
Fresh cherry or grape tomatoes
Cucumbers
Fresh Parsley and Mint
Lemon
Olive Oil
How do I make riced cauliflower?
While you can buy a whole cauliflower and pulse it in a food processor, I suggest buying prepackaged rice cauliflower. Frozen cauliflower rice is not recommended it is too watery. Bagged priced cauliflower is easy to find at any grocer. We are using cauliflower raw for maximum texture.
Tell me how to mix up this great salad?
It could not be easier. Start with a large mixing bowl. Add in the cauliflower rice, diced cucumber, and tomatoes. Mince your fresh parsley (Italian style works best) and mint. I love to use a Mezzaluna for chopping fresh herbs. (affiliate link) It’s a game changer in the kitchen. Fresh herbs are a must for this salad! Squeeze on some fresh lemon, drizzle on your olive oil, and add salt & pepper to taste. That’s it!

This sounds so light & refreshing! I’m trying to learn to like cukes a bit more, and this may be a great stepping stone. Cauliflower is one of my favorite raw veggies…I just added a couple florets (finely chopped) to a spontaneous chicken salad yesterday. The texture & crunch was a nice surprise:-)

Thanks and no need to cook the cauliflower. Keeping it raw maintains the nice crunch and texture. It would be too mushy if it were cooked. Let me know what you think
