Happy 2016 Meatless Monday lovers! I just returned from a 2 week vacation where I was really missing all of my home cooked veggie goodness. I don’t know about you but I am excited to get back to my regular routine and healthy eating schedule. I find it really hard to eat out for so long and I have been craving my veggies cooked my way. I needed something quick and easy for this week so I whipped up these Tofu Veggie Lettuce Wraps with a spicy peanut sauce in a just few minutes yesterday. Tina and I are glad to have you for Meatless Monday today!
I certainly over did on the carbs the last few weeks and I was looking for something a little lighter today. I used Cauliflower rice in this dish to lighten it up a bit and honestly did not miss the rice at all. I had this whole meal prepped and ready in under 30 minutes-perfect for an easy weeknight dinner.

These Tofu Veggie Lettuce Wraps are quick & easy and sure to please the vegetarians, vegans and gluten free eaters alike. They also make a great veggie option for Football games and Award show viewings don’t you think?
The kids are going back to school today and I am ready to kick off 2016 with some healthy, creative meals. I was dreaming up all kinds of yummy while hanging out on the beach. I am looking forward to sharing all the veggie eats with you all the next few weeks.
Anyone try anything new the last few weeks? I tried Pitaya-from passion fruit down in Aruba it was so good! I ate these fruit bowls almost everyday. I need to figure out how to make them!

Perhaps you read on Tina’s blog that she will be moving on to other pursuits starting next week and will be stepping down from hosting with me. I am thrilled to welcome my new co host Sarah from a Whisk and two wands. I know you will all love Sarah’s recipes as much as I do. Look for our new Meatless Monday linkup next week right here and over on Sarah’s blog. See you there!

Yum! I need to try this recipe especially that spicy peanut sauce.
The spicy peanut sauce is my fave! Happy new year
Cauliflower rice sounds like a great alternative. I totally overdid everything on vacation, especially sweets. We did make some great meals in the kitchen of our condo, though. That was nice. Trying to eat out with a 3 year old and a 10 month old all the time would have been a disaster. Welcome back and happy New Year!
I totally was off my schedule and I am looking forward to eating my way this week!
I love lettuce wraps, especially with peanut sauce! Yum! Thanks so much for the linkup!
I forgot how good they were! Thanks for joining us
Oh cauliflower rice…this sounds fabulous!! I can’t wait to try this one! Happy Monday!
Thanks you too and I love cauliflower rice
This looks so amazing! Can’t wait to try it! I’m hoping to cook more tofu this year :-))
I go through phases where I just can’t get enough of it!
I LOVE lettuce wraps! I think I first ordered them at PF Changs years back and now love getting them whenever I go to other restaurants. Love the idea of making my own, too. Mmm!
They are great and so easy too!
This sounds fabulous. Believe it or not, I’ve never made my own peanut sauce before. Sorry to see Tina go, but I look forward to meeting Sarah 🙂
Ooh you will love the peanut sauce so versatile. Yes sorry to lose Tina but I know you will love Sarah she is fabulous
These remind me of my favorite app from PF Chang’s. But I’ll bet this version wouldn’t give me a sodium hangover! Happy New Year!
Yes definitely less salty for sure!
After seeing all the pictures of your vacation I want a vacation! They do make frozen Pitaya packets but they don’t sell them here. I could order them online but I haven’t broken down to do that so instead I have made other frozen fruit bowls. I have tried to make smoothie bowls with dried dragon fruit but that wasn’t as good so like I said I stick to other ones like acai or other frozen fruit smoothie bowls.
These lettuce wraps look delicious, can’t wait to try them! I am really craving some healthy eats! The hard part for me came between New Years Eve and yesterday and that is where I gained my weight and started feeling like crap, before that I was doing great surprisingly.
While I am sad to see Tina go I’m excited to co host Meatless Monday with you!
I am so ready to get back on my regular eating schedule too! The fruit bowls were amazing there and I literally ate them everyday. I am so excited for you to co host!
Looks like a yummy recipe! I’m trying to inspire myself to get back in the kitchen and looking forward to getting some good meal plans with clean recipes! Looking forward to pics from Aruba too!
I love cooking and really missed it while away. I hope you will start sharing some of your recipes too!
Oooh, these look so tasty! I love anything with peanut sauce too! I’ve always wanted to try pitaya – the color is gorgeous!
I know the pink color was gorgeous and I ate those bowls everyday!
Yum! I love lettuce wraps! Can’t do tofu because of the soy but I’m sure they are delish!
You could certainly do all veggie or sub out some other protein. They are super easy too
I love the idea of spicy peanut sauce!
It’s very yummy and easy
Sounds good! I need to make it – I think both of my kids would like this. Happy New Year to you and your family! 🙂
Thanks! I do think kids like the lettuce wraps 🙂
We had our first normal, home-cooked meal in like two weeks last night and it was wonderful LOL! With all the parties and events and running around, the menu gets crazy.
I tried some new sushi rolls the other night at my husband’s birthday dinner, but that’s about it 🙂
Happy New Year!
I know I was so happy to get back to home cooked meals!
Awe, I’ll miss Tina but happy to welcome Sarah! Her recipes are always drool-worthy :). Welcome back from vacation!
Thanks and yes I am so excited for Sarah to co host with me. She is great!
I am not the biggest fan of tofu. Any other ideas I can use for this?
oh yes you can use any protein really-chicken or shrimp would work.
I’m not a tofu fan, but the recipe sounds amazing if I could put chicken in it! I love the flavors here!!
I don’t see why that wouldn’t work too!
Wow, do those sound yummy. I’m a vegetarian, so always am looking for tasty stuff.
Me too and I love the spicy peanut sauce. Hope you give it a try
I love lettuce wraps! Gonna have to give it a try!
They are easy and fun to fill with your favorite veggies
I should lie, but I hear the word Tofu and it just scares me. Years ago someone at work brought a tofu burger in and didn’t tell anyone, they were terrible, about half the room was spitting it out into the garbage I couldn’t even swallow. Clearly they weren’t a cook, and they told us after they had just picked them up from some Whole Foods Store and figured no one would notice, LOL
However, the rest of this looks fabulous, never would have thought about using Cauliflower like a rice and who doesn’t love a great wrap!
ha ha you are too funny! I promise the tofu won’t kill you but you could use another protein if you wish. Grating up cauliflower is a great sub for rice. It’s really filling.
I’m not a big fan of tofu though I do like it in one of the soups at the local Thai restaurant. I love lettuce wraps in general though!
Don’t fear the tofu! You cold absolutely use another protein in here though.
haha, not afraid – just don’t like it! 🙂
I need to get past my tofu fear and make it a goal for 2016! This looks like a great easy week night dinner!
Ha ha don’t fear tofu it’s really easy to work with and takes on any flavor. You could also use any protein in here really though. Have a great week!
welcome back – hope you are adjusting well! wraps are always a great choice!
They are easy and fast! Ugh it got rather chilly while I was gone 🙂
It is really hard to get enough veggies on vacation. There are only so many salads a girl can eat! This looks like a great recipe to get back into your own healthy eating.
It is hard to stay on track while away for sure. I am glad to be back in my kitchen and my bed!
I literally JUST made The Pioneer Woman’s recipe for tofu lettuce wraps, ha! Next time I’ll make yours 🙂
I don’t know her recipes I will have to check them out!
Those wraps look like something I’d love to take for lunch!
Curious…do your kids and hubs eat the veggie meals? Or do they have meat? How do you make it work?
Oh my no my husband is a total carnivore! My son will eat some of my foods. I am embarrassed to tell you that I often make 2 dinners. Sometimes they will eat my veggies as a side.
OMG between the lettuce wraps and the fruit cup I’m ready to eat something now!
lol sorry 🙂
I can’t wait to make these!! They look SO good!
Thanks they are super easy too
I love lettuce wraps! Your recipe looks delicious. The one time I tried adding tofu to my wrap recipe was a fail.
Oh really?! I thought it worked really well but I am sure you could use another protein as well. The lettuce is the weak link it has to be strong
I love lettuce wraps – I put whatever I have available in them for lunch on a regular basis.
They are so good and easy to whip up aren’t they?!
Such great recipes! I’m always so inspired after reading, I’m going to have our spanish rice wraps in a lettuce leaf, thanks for the reminder!
Thanks! I love the lettuce wraps too so easy
you know, I’ve never had tofu! Kinda scared to buy it, try it and not like it lol. But in my efforts to eat meatless I need other options other than beans and eggs 🙂
Ha you might have to re try it. When you mix it into something else it really isn’t noticeable. Do you like tempeh?
Any idea on the nutritional info on this?
They are very high in protein and nutrients and very low in carbs. I don’t count calories but I know they are super healthy and I hope you enjoy them
