Sweet and Spicy Apple Jicama Slaw

What is Jicama? Where do I find it?
Jicama, found widely at most grocery stores, is a root vegetable that is low in carbs. High in vitamin C, magnesium, potassium, and fiber, jicama is a tasty nutritious to any salad.
Tell me about that dressing
I love a light, zippy and flavorful dressing on my slaw, and this Sweet and Spicy Apple Jicama Slaw has a fruity base of lime and lemon juice. I use a little bit of honey for sweetness and if you like a little kick, I am kind of obsessed with this “hot honey”.
How to adjust the spiciness
The sweet and spicy combination is one of my favorites to do for salads. If you are not into spicy, just decrease the jalapeño to a 1/2 instead of whole pepper. Using the hot honey also gives a nice little kick that everyone will love. Vegan and Gluten-free. Hope you all enjoy this quick and easy Sweet and Spicy Apple Jicama Slaw. Sweet and Spicy Apple Jicama Slaw Summer BBQ Must Make
A sweet and spicy easy vegan slaw that is perfect for your summer BBQ or side salad for any meal. Cabbage, apples, jicama, lime and honey and jalapeño
Ingredients
- 1 bag of cole slaw mix
- 1 bag of shredded red cabbage
- 1 granny smith apple, 1 red apple any variety sliced thin
- 1 Cup of diced jicama
- 1 jalapeno pepper-minced
- juice of one lime
- juice of one lemon
- 1/2 C apple cider vinegar
- 4 Tbs honey or hot honey
- 1/4 C olive oil
Instructions
- slice apples and immediately pour juice of lemon on top of them to prevent browning
- To a large mixing bowl add:
- slaw, jicama, cabbage and mix to combine
- pour apples with lemon juice into bowl
- Whisk together: jalapeno, vinegar, olive oil, honey, lime juice
- pour on top to combine
- Chill 30 min and serve
Notes
adjust the spiciness by adding more or less of the jalapeño
