7 Layer Mediterranean Salad-Meatless Monday

Thanks for joining Sarah and me for Meatless Monday! With the yummy spring produce coming out, I just want to eat all the salad all day long. With Easter, Passover and Mother’s Day quickly approaching, this is a fantastic easy salad for entertaining. Packed with veggies along with hummus, feta and tabouleh this 7 layer Mediterranean Salad makes a great presentation.

I took many of my favorite Mediterranean salad components: lettuce, tomato, hummus, chick peas, tabouleh, feta and cucumber and layered them into a trifle bowl to create this crunchy, yummy delicious meal. It’s a salad and a dip all in one! Normally, I like to make my own tabouleh and hummus but I was in a time crunch and used store bought which worked really well.

 

I like to prep all my ingredients in advance so I am ready to go. Honestly, this 7 layer Mediterranean salad took less than 15 minutes to pull together and it looked absolutely fabulous and tasted incredible. I spiralized the cucumbers on top but if you are in a rush just dice them up. This could easily be made vegan by leaving out the feta cheese. Hummus, feta, tabouleh and all the yummy veggies paired so well together. I served it with a little Tzatziki on the side and a simple vinaigrette and it was perfect.

Ingredients

  • 6 cups of chopped Romaine or Spinach
  • 2 Cups of Tabouleh
  • 1 15 oz can of chick peas (rinsed & drained)
  • 2 tomatoes sliced
  • 16 oz of hummus
  • 1 1/2 C feta cheese
  • 2 cucumbers (sliced thinly or spiralized)
  • optional topping: Tzatziki or vinegarette

Instructions

  1. In a glass bowl layer the following:
  2. lettuce
  3. Tabouleh
  4. chick peas
  5. hummus
  6. feta
  7. tomatoes
  8. Cucumbers
  9. optional toppings: olives, Tzatziki, vinegarette
  10. Chill or serve immediately

I made this in a large glass trifle bowl, however, I also think it would be fantastic on a smaller scale and even in some mason jars. Using the glass bowl allows you to really appreciate all the layers and makes is very visually appealing for parties.

    This looks insane! A total PARTY IN A BOWL! Those tomatoes look so fresh and so clean! I am addicted to chickpeas – although roasted preferably (would be awesome in this salad) and crisp romaine – YES! 🙂 We need to get some olives in this bad (good?) boy!
