This Warm Brussels Sprouts Caesar Salad with ChickPea Crumbs takes Brussels to a whole next level. I saw something similar on TikTok that inspired me to come up with my own version. This recipe was so delicious that it earned a spot on our Thanksgiving table. I am excited to tell you all about it.
Warm Brussels Sprouts Caesar with Toasted Chick Pea Crumbs
What makes this salad so tasty? Layers of flavors and textures in one bite. I literally ate it 3 days in a row.
Toasted ChickPea Crumbles
Perhaps you have had toasted chickpeas before? These are next level. After draining and drying the chickpeas, they are pulsed in a food processor into a breadcrumb-like texture. Next, they are roasted with some olive oil and garlic powder until they are crispy.
Brussels Sprouts
I sliced the Brussels instead of shredding them in a food processor. Next, they are seasoned and roasted to perfection.
Caesar Dressing
I dressed this salad with my signature Caesar Dressing. It is a classic blend of anchovies, lemon, olive oil, and egg whites. It’s our family favorite for a good reason!
What are the ingredients?
To make this delish Warm Brussels Caesar Salad with Chickpea Crumbles, the main ingredients are:
2 lbs of Brussels Sprouts & a can of chickpeas
olive oil, lemon, garlic cloves, garlic powder, egg whites, anchovies
How to serve
This salad is best served warm or at room temperature. When ready to serve, toss the Brussels with the Caesar dressing and sprinkle with the chickpea crumbs. An optional sprinkle of Parmesan cheese makes it even better.
Can this be made in advance?
The chickpea crumbs can be made in advance and stored in an airtight bag or container. The Brussels can be made in advance and reheated to serve. Take care not to overcook as they taste better with a little crunch.

Ingredients
- 2 lbs Brussels sprouts-sliced
- 15 oz chickpeas drained
- Olive oil
- 1/4 C Parmesean Cheese
- salt, pepper, garlic pepper
- Caesar Dressing:
- tin of anchovies
- 3 garlic closes
- 1/2 C olive oil
- 2 egg whites
- splash of Worchestire sauce
- juice of 1/2 lemon
Instructions
- drain chickpeas and allow to dry completely
- pulse chickpeas in a food processor to resemble breadcrumbs
- line baking sheet with parchment paper add chcikpeas
- drizzle w olive oil, salt and pepper, and garlic powder
- bake at 375 degrees for 20 min
- meanwhile, slice Brussels sprouts in a food processor
- Add to baking sheet with parchment paper
- coat with olive oil
- bake for 15-20 min
- prepare Caesar dressing
- Add all ingredients to the food processor and pulse
- Add Brussels to a large bowl, drizzle with Caesar Salad and Parmesan Cheese add chickpea breadcrumbs
- serve warm or room temperature
