Happy October Meatless Monday lovers! To me October is the real start of fall and time to bring out the soups, stews, chilis and yes the pumpkin finally. For the next few months my crock pot will now rest on the counter inside of being stored away. I am so excited to share this Veggie Tortilla Soup & homemade healthy tortilla chips with you all today.

Why am I so excited about this Veggie Tortilla Soup today? This was my debut recipe for my new Soup Club!! I can’t wait to tell you all about the Soup Club and how it works but you will need to come back Friday to hear about it!
And everyone knows you can’t have a good Veggie Tortilla Soup without homemade Healthy Tortilla Chips right? They are so easy to make that you will never need to buy them again. Add on the avocado, cheese, sour cream & chips and you will not be disappointed. Vegetarian, Vegan and Gluten Free-got you all this time so jump in and enjoy a bowl.
The easiest way to make soups and chilis (in my opinion) is in the crock pot but this will work just as well in a stock pot. Coming home to the yummy smells that fill the house with these flavors and spices is amazing. Bonus it freezes “souper” well 🙂
Veggie Tortilla Soup & Healthy Tortilla Chips

Ingredients
- 1 red & 1 yellow pepper-cleaned & diced
- 2 garlic cloves-crushed
- 1/2 onion diced
- 2 15 oz cans of diced tomatoes
- 1 cup frozen corn
- handful of cilantro-minced
- 1 large zucchini-diced
- 4 C Veggie broth-low sodium
- 1 15 oz can black beans-rinsed
- 1 jalapeno diced
- juice of 1 lime
- 2-3 tsp of chili powder
- pepper & salt to taste
- 1 tsp red pepper
- 2 tsp cumin
- Garnish:
- avocado, sour cream, lime, tortilla chips, cheese
- For Tortilla chips:
- 32 corn tortillas
- cooking spray
- Kosher salt
Instructions
- Place all ingredients in a crock pot and cook at high for 4 hours or low for 6 hours.
- Top with desired garnish and serve.
- For tortilla chips:
- cut corn tortilla into strips or chip shape
- arrange in single layer on baking sheet
- Spray generously with cooking spray and sprinkle with kosher salt
- bake at 375 for 10-15 min until crispy turning often

Your chips look so good, it’s 6am and I want chips now! The Mexican Restaurant near my house makes all their own and they are to die for. Ummm Soup Club? Yes tell me more about that club, it has my name all over it! Now that it is fall I’m into chilis, squash and soups!

If it has to get cold out then you might as well feel warm and cozy with soups!
Soup sounds so good right now! It cooled off 20 degrees in two days here. I’m freezing. Ok so it’s still 80 but still!
The temps really dropped here too and it finally feels like fall. Now that it stopped raining I am ready for fall running.
This is really similar to a soup I’ve been making for years. I love that’s totally versatile and you can add extra veggies or meat, depending on the size and makeup of the crowd you are feeding.
Yes exactly you could easily add a meat protein to it to make it more hearty.
Ooh it’s soup season! While it’s almost 70 here today, I’m ready for fall foods, including soup. Love a good tortilla soup – and homemade tortilla chips? Yum!

I make homemade tortillas for Dave probably 2 times a week. He’s addicted. We like to add lime juice and salt, so delish. I can’t believe people buy them fried when they are so good and crispy baked in the oven. Now they know better!! Loving this soup, I have been on a chili kick but soup is sure to follow! We dug out the crock pot this weekend as well, trying to find somewhere to put it on the counter because I don’t want to be slaving over the stove this winter!
I know I will never buy them again and my son even said they were as good as Chipotle-win!

It’s been so cold here, highs not making it or barely making it to 60, so soups sound so good right now! I’ll take a big bowl of this with all the avocado on top!
When I make tortilla chips I like to spray them with coconut oil spray, sprinkle with salt, and sometimes add a squeeze of fresh lime. I usually use sprouted tortillas but we have a bunch of corn ones I picked up for something and we only ate a fraction of the package since it was so big so I should use them up and make chips and soup tonight.
Yes lime is great on them too! So easy to make your own isn’t it and my son even likes them.
I could never turn down anything Tortilla! Love Love Love 🙂

It’s still hot outside here in SoCal, but my family and I still love soup. In fact, we eat it year round. Tortilla soup is always a hit in my house. I also order it when we go to dinner too! Yummo!

This soup sounds tasty. A great soup for fall. Although there are alot of ingredients in that soup. And what makes the Corn tortillas healthy?
The corn tortillas are healthier than flour ones. These are baked and not fried as well

The crock pot came out on Sunday! My hubby made his first crock of chili (shhhh- not my favorite) now this soup sounds good! and I can’t wait to hear about the soup club!!!!

Mmmmm I love tortilla soup! My favorite is from Islands burger shack – if you have a chance to try I highly recommend! But then again the homemade version is likely to be even better! Can’t wait to give it a shot. Thanks for sharing, Deborah
