Happy New Year friends! Hope you all had a fantastic Holiday and New Year. Thanks for joining Sarah and me today to start off the New Year with some plant based, healthy Meatless Monday recipes.     I love how fresh your recipes always are. So many great veggies. I thought I’d seen all your recipes, but I don’t remember that Enchilada soup. It’s kind of soup weather here, though not really compared to the rest of the country! 😊

    Yum that sweet potato toast looks delicious! We got a huge box from the FFA fruit sale and I’ve been eating one pretty much everyday.
