      • Happy Meatless Monday! Hope some of you are enjoying a day off today for Columbus Day. I am sharing one of my new favorite morning creations today-Sweet Potato Breakfast Skillet. I kind of envisioned this after seeing a picture of a huge plate of hash browns and eggs. Breakfast is the most important meal of the day so let’s do it better! It’s so easy to bump up the nutrition in a classic breakfast dish by adding in sweet potatoes so that’s just what I did.

      • I decided to make these in individual sized cast iron skillets (amazon link) which worked out perfectly however you can easily make them in a large sized skilled and even in muffin tins. I’ve prepared them all 3 ways. I just love the cute presentation of the mini skillets. I think it’s great for holiday guests too.
      • Cooks notes:
      • This recipe makes 2 individual skillets (2 servings). You can also use a large skillet but depending on size may need to double the recipe. I’ve also made these in muffin tins and individually wrapped them to eat throughout the week.
      • You can easily switch up the veggies and even add in some other proteins if you have some meat eaters in your house.
      • It’s easy to prep the veggies the night before and pop them in the oven if you have relatives visiting for the holidays. Eggs are not limited to breakfast! They also warm up really well for leftovers in the morning if you make them for dinner.
      • While at one of the popular salad chains recently, I decided I needed to have one of these veggie choppers they were using. Total game changer!
      • I loved this breakfast! It kept me full for hours and I’m excited to keep making it with lots of variations.

Sweet Potato Breakfast Skillet

Ingredients

  • For Sweet Potato crust:
  • 1 sweet potato-shredded skin on
  • 1 egg -beaten
  • 1/4 c cheddar cheese
  • For the eggs:
  • 5 eggs
  • splash of milk
  • 1/2 cup of chopped spinach
  • 1/2 c chopped red & yellow peppers
  • 1/2 c cheese
  • salt & pepper

Instructions

  1. Preheat oven to 400
  2. Coat skillet with oil
  3. Combine sweet potato, 1 egg and 1/4 cup of cheese
  4. Distribute evenly into 2 pans (or 1 large)
  5. Bake for 20 min to create a crust
  6. Meanwhile, beat together eggs, milk & cheese in small bowl
  7. chop veggies
  8. Remove skillet from over
  9. Add 1/2 of veggies to each skillet
  10. Pour in eggs & cheese
  11. Return to oven and bake until fluffy about 15 min

    I love hearty breakfast! Anything with eggs and veggies have my vote. This looks great, too bad I don’t have off for Columbus Day today, otherwise this would definitely be on my menu!

    i’ve definitely seen a few potato crusts lately, but never one made with sweet potatoes, which i’d much prefer. this looks to me like a primo choice for breakfast for dinner!

    YUM! We love to mix together cubed sweet potato or butternut squash and mix with peppers, onions, greens, and top with an egg. This is like that but with cheese so I bet the girls would love it even more I will have to give it a try. Maybe tonight if it’s a Brinner night!
