Happy Meatless Monday! Wow this summer is just flying by isn’t it?! I can’t believe that we are well into July already. When it is this hot out, I like to eat something pretty light for dinner. I am trying to take advantage of the seasonal veggies as well. Today I am bringing you a twist on a recipe I did last fall. I created a crustless quiche made with spaghetti squash filled with zucchini, tomato & feta. It takes a little more time to prepare than my usual recipes but trust me, it’s worth it! I call it “Squiche”.

- 1 spaghetti squash
- 1 med zucchini-thinly sliced length wise
- 1 med tomato thinly sliced
- 3 eggs, 3 egg whites
- 1/4 cup of feta cheese (optional) chopped
- 2 tbl parm cheese
- pepper & garlic powder to taste
- Pre heat oven to 400 degrees
- Cut squash length wise & remove seeds
- Place in a glass casserole dish (cut side down_
- fill with 1-2 inches of water and cover with plastic wrap
- microwave until squash is cooked about 12-14 min
- Scrape out squash & allow to drain out water on paper towel
- spray pie dish with cooking spray and press squash into dish
- sprinkle with parm cheese and pepper and bake for 45 min until crust hardens
- Remove from oven
- place zucchini strips into bottom
- whisk eggs & egg whites and pour on top
- place tomato slices and feta on top
- bake for 45 min or until set
- Cut into 3-4 servings
What I really love about this dish is that I can make it for dinner and eat it for breakfast or lunch the next day. It’s full of protein and very filling. My Squiche is vegetarian, low carb, Gluten free & can easily be made Paleo friendly by leaving out the cheese. You can really mix up the veggies based on what is in season. This has become one of my favorite dishes! Hope you enjoy it!

I LOVE the names you come up with for these recipes, they always make me smile, and they would make my belly happy if I made them! Yummy! And very summery! I am not as cool as you….spaghetti squash is usually cooked in the boring way :p

This looks really interesting. I enjoy quiche and squash, not creative enough to think of this, though. Will be referencing later after I do my grocery shopping again (we just did zucchini and squash on the grill)

I love them on the grill as well however I like to make dishes like this that I can eat again the next day for breakfast or lunch.

Very nice. I love quiche, and I haven’t made it yet this summer. What’s wrong with me???
Squash and I are not on the best of terms, however. I can handle raw zucchini and yellow squash, but beyond that, it’s a textural thing. There are so many great recipes for spaghetti squash, so I might just have to suck it up and try again.

I think you should try it again it’s very similar to zucchini. Perhaps if you made it this way the texture would be different? Let me know if you try it

I love this. I really might go grab these ingredients after work today. I would probably leave out the cheese or use my Diaya products… I love the fun way to incorporate veggies into a summer time dish. Love this! I can’t wait for our garden to start popping out spaghetti squash. We usually get a lot of them so I have been fighting the urge to buy them when I’m craving it as I know we usually are eating them almost daily when our garden is in full bloom. We just started getting Zucchini and we are getting a lot but not booming to the point where we are trying to give them away like crazy like we have done in past years.

Yum! Does it reheat well in the microwave? I know you mentioned eating leftovers the next day and I was just wondering if you ate them cold or warm. This sounds like such a fun meal.

You can make it without the cheese and I believe it would still be very tasty!
I am not a huge fan of spaghetti squash, but I love quiche! I make it all the time and freeze some foe quick meals. I’ll have to try this recipe.
