Thanks for joining Sarah and me for Meatless Monday today. I can’t believe it’s the first day of May already! That deserves some special attention in the form of some Cinco De Mayo fun foods. I am doing something a little bit different today with a fun version of a Strawberry Margarita. Can’t have Cinco De Mayo without margaritas right?

Strawberry Margaritas

Most margaritas that you find in restaurants are really just sugary pre-made mixes but why not make your Strawberry Margarita just a little healthier and tastier? I’ve whipped up a yummy one using real fruit and fruit juice with no added sugar. It’s easy to make them family friendly by leaving out the tequila so everyone can say “Ole!”

I don’t know about you, but I could seriously live on Mexican inspired meals everyday. I love all the avocado of course but I also love all of the beans and rice and cilantro. Oh lets not forget tortilla chips and salsa. If you are looking for some vegetarian ideas to celebrate Cinco De Mayo I’ve got you covered. Here are a few of my favorites.

This Tex Mex Brown Rice Salad that I shared last week will definitely be in my regular meal rotation all year long.

Looking for something quick and easy for a weeknight meal? This 3 Bean Southwestern Quinoa Skillet is a one pan wonder.

Feeling Brunchy? This Black Bean and Spinach Tortilla Breakfast is a crowd pleaser for sure. Loaded with eggs, spinach and cheese. I am definitely making this dish sometime this week.

Strawberry Margaritas & Vegetarian Cinco De Mayo Favorites

Strawberry Margaritas

Ingredients

  • 1 liter of Lime flavored sparkling water or seltzer
  • 1/2 C of orange juice
  • Juice from 1 lime
  • 2 Cups of frozen strawberries
  • optional Tequila
  • colored salt for rim (optional)
  • Garnish with fresh strawberries and lime slices

Instructions

  1. Add all ingredients to a blender and pulse until combined
  2. Serve immediately

    I love the idea of a healthier margarita! I usually don’t drink them but I could definitely do a homemade one!

    I absolutely love cinco de mayo and actually ate a lot of delicious chips and guacamole and Mexican eats on Saturday. My favorite! These recipes look delicious and going to check some of them out! xoxo

    I hate those premixed margarita drinks- ugh they give me a headache! In some restaurants down here they charge $20-$25 to get a margarita with all fresh ingredients- crazy! I need to learn to make these at home! Thanks for sharing! Ole!
