Thanks for joining Sarah and me for Meatless Monday today. I can’t believe it’s the first day of May already! That deserves some special attention in the form of some Cinco De Mayo fun foods. I am doing something a little bit different today with a fun version of a Strawberry Margarita. Can’t have Cinco De Mayo without margaritas right?
Strawberry Margaritas
Most margaritas that you find in restaurants are really just sugary pre-made mixes but why not make your Strawberry Margarita just a little healthier and tastier? I’ve whipped up a yummy one using real fruit and fruit juice with no added sugar. It’s easy to make them family friendly by leaving out the tequila so everyone can say “Ole!”
I don’t know about you, but I could seriously live on Mexican inspired meals everyday. I love all the avocado of course but I also love all of the beans and rice and cilantro. Oh lets not forget tortilla chips and salsa. If you are looking for some vegetarian ideas to celebrate Cinco De Mayo I’ve got you covered. Here are a few of my favorites.
This Tex Mex Brown Rice Salad that I shared last week will definitely be in my regular meal rotation all year long.
Looking for something quick and easy for a weeknight meal? This 3 Bean Southwestern Quinoa Skillet is a one pan wonder.
Feeling Brunchy? This Black Bean and Spinach Tortilla Breakfast is a crowd pleaser for sure. Loaded with eggs, spinach and cheese. I am definitely making this dish sometime this week.

Tell me what are you making for Cinco De Mayo? Strawberry Margaritas anyone?

I love the idea of a healthier margarita! I usually don’t drink them but I could definitely do a homemade one!
I don’t usually drink them either but I also liked the idea of a healthier margarita

Yum, sounds delicious! I forgot that Cinco de Mayo is coming up this week. I’ll have to look into what we have at home to make some Mexican food and margaritas 🙂
Yes you must! At least guacamole 🙂
I love all of these recipes, especially that quinoa salad. But more importantly, I could use that margarita (Margarita Mondays… let’s make that a thing).
oh yes margarita Mondays sounds fun!
I could live on Mexican everyday as well. And what goes better with Mexican that a Margarita, yum!
You bet!
I need to make these this summer! So many great recipes!

This margarita looks fantastic! I could eat tex-mex daily.
I know guac and chips and salsa
i have never been a huge fan of margaritas but Mexican food – yes give me all the salsa and guac 🙂
salsa and guac is a food group for me
How fun! I never think much of Cinqo de Mayo here but these recipes look terrific. Love the strawberry margarita especially.
I think it’s kind of become a thing the last few years around here
What is better than Margaritas on Cinco de Mayo?! Looks yummy!

Oh boy I want one of everything in this post! Definitely making my mouth water now!

These recipes all have me in the spirit of the week! Our son graduates on Friday evening…so we might be hitting up a Mexican place for a special fiesta!
That would be a fun place to celebrate!
Oh you had me at Margarita!!! I haven’t had one in years! I miss wine too lol! I love all of your recipes you post! We love Mexican food at my house!
Thanks so much hope you try some out
I’m with ya, Mexican meals are probably my fav kind of cuisine to include regularly. These strawberry margaritas look fab! I love that you use real fruit.
Thanks the real fruit makes them like a fruit salad 🙂
Oh, and Cinqo de Mayo is on a FRIDAY this year! Ole!
Just how much tequila goes in that margarita? 🙂
So I actually don’t drink tequila so you may have to do a taste test!
OMG I want this now!!
Oh good that was kind of the idea 🙂
I’m all about no added sugar cocktails. Love that you just used nature’s sweetness!
Thanks so much! It is easy to sub out some of the unhealthy ingredients. Thanks for stopping in
I must say I too could eat Tex mex or Mexican every day of the week! Great mouth watering photos!
Thanks so much! Have a great week
Oh man! These recipes look amazing. Specifically the margarita 😉
Thanks I made a batch of the black bean tortillas last night forgot how good it is
So many delicious vegetarian Cinco De Mayo options and the margaritas look so good, especially right now. Happy Meatless Monday!
Thanks you too! Hope you have a fabulous rest of your week
All the recipes look delicious Deborah.
Thanks so much Jill!
Yummo! These look fantastic! Pinning for the weekend of course~
Fabulous hope you enjoy them
We are huge Mexican food fans at our house. We actually made turkey tacos for dinner last night, and I’m sure we’ll have another Mexican dish later this week.
They are so tasty and a great excuse for guacamole
I hate those premixed margarita drinks- ugh they give me a headache! In some restaurants down here they charge $20-$25 to get a margarita with all fresh ingredients- crazy! I need to learn to make these at home! Thanks for sharing! Ole!
Wow that is really expensive! I never order them out bc I don’t like tequila or that sugary mix so I decided to make my own. Have a great rest of your week!
That sounds cute, but I have never tried it at any restaurant. Surely it will be an enjoyable experience 😉
Hope you try it out!
A healthier margarita?!?! Yes please!
Hope you enjoy it!
Everything looks so good! The margarita looks very refreshing 🙂
Thanks so much hope you are having a fabulous week
