Perhaps you have seen the new Corn Ribs craze on Tik Tok or Pinterest? I did and decided I wanted to see what the hullabaloo was all about. Gotta tell you, they were pretty darn tasty. What do you need to know about this new trend? Basically, it’s a riff on a traditional grilled rib using corn on the cob ears. These Spiced Grilled Corn Ribs are easy and really quite delish.
Spiced Grilled Corn Ribs
These Spiced Grilled Corn Ribs will be big hits at any BBQ or backyard gatherings this summer. You will be amazed how simple they are. Can’t believe I did not think of doing it myself sooner. Whole corn of the cob ears are cut into quarters and grilled to resemble “ribs”. They are ridiculously easy and really quite yummy.
How do I make them?
They could not be easier! Simply slice your corn into halves and the. half again. This is the hardest part. Please be careful not to cut yourself while doing this. Once the corn is at full peak, they should cut a little easier and of course, be tastier. Once you’ve cut your corn, you brush them with a little olive oil and then sprinkle on the spice mix. I created a simple mix of salt, pepper, chili powder, garlic powder, and cumin. You could also use any type of rub or spice that suits your fancy.
What should I serve Spiced Grilled Corn ribs with?
Just like corn on the cob, these Spiced Grilled Corn Ribs are the perfect side to just about anything you would grill. Chicken, beef, burgers, hot dogs, or even pork ribs. They are a great vegan, low-calorie, and gluten free side dish. Perfect for any summertime dinner.
How can I vary the spices?
It is easy to make them more or less spicy by adjusting the chili powder. You could also squeeze a little chili powder and lime on before serving for a Mexican Twist. Eat them straight up, dip them into BBQ Sauce, chipotle mayo, or add on Cojita cheese. Anything goes!

Ingredients
- 4 corn ears (cut into quarters)
- Olive oil for brushing
- 1 tsp cumin, chili powder, garlic powder, black pepper
- 1/2 tsp salt
Instructions
- heat grill to high
- carefully cut corn into quarters
- brush with olive oil to coat (can use melted butter)
- combine all spices in small bowl
- rub spice blend onto corn ears
- grill for about 10 min turning to achieve char on all sides
- serve and enjoy warm
Notes
Leftovers can be cut off of the cob and used in salads. Corn can be a little tricky to cut take caution
