Thanks for joining Sarah and me for Meatless Monday! It is never too early to start thinking about Holiday meal planning is it? This week, with a little help from friends, I bring you my roundup From Soups to Sides: Your Guide to Healthy Holiday Vegetarian Meals.
Tis the season and today I am sharing my Roasted Butternut Squash soup. Roasting the squash, carrots and granny smith apples first really brings out their flavor and creates a delicious soup. It’s vegan, gluten free & sugar free but has plenty of creaminess and a wonderful rich flavor. Find the full recipe right here.
After the soup course it’s time for this beautifully crafted Portobella Mushroom Salad from my friend Nikki over at View from in here check out her full recipe here. Gluten free, Vegetarian and Sugar Free. A healthy Holiday option that doesn’t lack in flavor. Roasted vegetables, gooey fresh Mozzarella, sweet ripe tomatoes, topped with a perfectly cooked Portobella Mushroom with the flavor of grilled steak. Could it get any better?
The holidays wouldn’t be the same without sweet potatoes and this Fresh and Fruity Sweet Potato hash from Kaila @ Healthy Helper Blog is sure to please. Find the full recipe here. Spice up your sweet potatoes with this sweet & salty combo that’s gluten free, vegan and paleo friendly.

Deborah, all of these recipes sound so delish. I am a soup nut, and I love Butternut Squash soup, but have never made it myself. The addition of Granny Smith apples sounds so good, and I love cooking soup in the slow cooker, the house smells good all day long! I am adding this to our soup rotation, we love soup all fall and winter! And I’m going to whip up a batch for the holidays. It’s perfect!

I love Panera’s butternut squash soup but I am sure your version is much healthier. I am a huge cheese fan too so that pesto cheese blossom sounds delicious!

Loving all the soups right now and could eat it daily! I can’t say I’ve ever seen soups at our holiday get togethers but was thinking about it for the ones we host but thought people would comment for the “real food”. Sides and apps are always a win! Happy Meatless Monday!

I made the salad you posted I think it was about 2 weeks ago, (well all but a couple of ingredients I couldn’t find) it was delicious, and it lasted a good 4 days in the fridge without the dressing on it and was yummy each time, thanks!!!

omg this all looks amazing, especially the sweet potato hash! I went out to lunch the other day and ate a cheeseburger which made my stomach NOT happy for the entire day, and it made me think that I really should eat more meatless…perhaps I need to really try it after the marathon.
