“Souper” Foods Soup

I’ve got a great Meatless Monday recipe for you all today. So please join Tina Muir and I to check out all of the fabulous link ups below.

We all know we are supposed to eat the so called “super foods” but how to fit them all into a balanced diet is the question. Well, wonder no more friends! I’ve combined them into one delicious, steamy, healthy bowl of soup. It’s “soup”er easy too! (Couldn’t resist that one). Perfect for a cool fall day and hearty enough to please the whole family.

“Souper” Foods Soup
Recipe Type: lunch, dinner
Author: Confessions of A Mother Runner
An easy, hearty, super foods soup to please the whole family
Ingredients
  • 1 onion chopped
  • 20 oz package of Butternut Squash-diced
  • 1 large Sweet Potato-skin on, diced
  • 28 oz can of diced tomatoes
  • 15 oz can of Black Beans-rinsed and drained
  • 1 Red Pepper-diced
  • 48 oz. V-8 juice (spicy or regular)
  • 2 Cups of Kale-chopped
  • 2/3 Cup Quinoa
  • 1 Avocado
Instructions
  1. Simply add all ingredients to crock pot and cook on high for 4 hours or low for 6-8 hours
  2. Alternatively, add ingredients to a stock pot, bring to a boil reduce to simmer for 2 hours
  3. Season with garlic powder, salt, pepper, oregano, basil, red pepper
  4. Garnish with Avocado & serve

    Love the idea of using v8 instead of broth or tomato paste, etc. I don’t think I’ve tried that approach yet!

    Sounds delicious! I’ve never thought to try quinoa in soup for some reason. But it seems like it would be a great addition and more protein than barley, pasta, or rice, which is what I usually use in soups.

    I love V-8 in soup (can’t stand it as a drink LOL). I could totally eat this, but I’d be eating it by myself LOL.

      I wouldn’t drink it either but I love it for a soup base. I was the only one who ate this at our house too. I froze it in indiv portions to take out during the week.

    This sounds great– I’d love to swap out the V8 for just veggie stock because I am not a fan of all of the added ingredients in V8– I’m loving and living on soups these days!!

    This looks and sounds amazing!! LOVE that every ingredient is great for you! I made a similar chili to this last year but mine didn’t have butternut squash… that would be so tasty! Love the idea of using V8 too!
