Thanks for joining Sarah and me for Meatless Monday today. I just can’t seem to get enough of the all the tomatoes this summer. I am eating them in everything! I love the small sweet ones (yellow and red) both raw in salads and also cooked in stir fry meals and sauces. Sometimes I think I crave bowls of spaghetti with marinara sauce just so I can eat the sauce. Anyone else? Today, I have a simple yet incredibly delicious recipe that my family has been enjoying serving the past few weeks. This ridiculously easy Skillet Charred Tomato Bruschetta will have your whole family double dipping.

Skillet Charred Tomato Bruschetta

Honestly, you won’t believe how simple this Tomato Bruschetta is. You will need a nice sturdy cast iron skillet to start and some high quality extra virgin olive oil. I like to use a combination of yellow and red cherry tomatoes but any or either are fine. Add in a little fresh garlic, salt, pepper and basil and that’s it.

I know I could move to Italy and be one happy girl. I would live off of pasta and pizza and all things tomato all the time. But alas, that is probably not happening. Italian food is one thing all of our family members will eat so it’s our go to when want to cook a nice big family dinner. We originally prepared the Skillet Charred Tomato Bruschetta as a side to eat atop homemade bread. The next morning I made an omelet and topped it with the left over tomatoes and oh my goodness it was delicious.

Sometimes you just have to splurge on really good bread and this is how you should do it. Trust me. Your family will thank you. Hope you enjoy this super simple summer Skillet Charred Tomato Bruschetta. Pairs perfectly with just about any meal.

Skillet charred Tomato bruschetta

Ingredients

  • 2 pints of red and/or yellow cherry tomatoes
  • (rinsed and dried)
  • Olive Oil to coat
  • Kosher salt & pepper to taste
  • 2 garlic cloves-minced
  • fresh basil

Instructions

  1. Preheat skillet on high until smoking hot
  2. Meanwhile in a large bowl toss together
  3. tomatoes, olive oil, salt, pepper, garlic and basil
  4. Add to smoking skillet and allow to char
  5. about 5-10 min
  6. Serve warm with fresh bread

    Oh, I’m a sucker for a good bruschetta and I’m sure this way of cooking your tomatoes adds another layer of flavor! Beautiful and now I’m drooling thinking about this!

    I’d totally dip into that! Tomatoes are everywhere right now…except in my garden thanks to way too much rain. I do have some coming along on the deck so it’s not a total loss.

    I think I could probably survive on bruschetta. I love the combination of flavors. This looks so good!

    For some reason my inlinkz would not go through. It said there wasn’t a backlink, which of course there is (that’s how I got here lol!). I submitted anyway, but I guess you have to approve.

    I’m with ya on eating the marinara sauce by itself. No pasta needed! This looks delicious. Cherry tomatoes are so good when cooked or roasted.

    This looks so incredibly yummy! I just love tomatoes. I have 9 plants in my garden including a few heirloom varieties this year, and then 3 other plants on my deck. I’d bet we eat them at least 5 days a week!

      I have never planted my own tomatoes but they are my favorite. It would be amazing to make this with all different types for sure

        You should do it! If you don’t have garden space, they grow very nicely in containers on your deck or porch. It’s so wonderful to pick them fresh off the vine and just eat them!

    Brilliant idea, but cooked tomatoes are so very much not my thing. I wish I liked them better because they are so delicious raw.

    I’m not a big fan of cherry tomatoes but any veggie is great roasted. It brings out a different flavor in them.
