Today I have a quick and easy Mexican Breakfast Pizza that you are going to want to make over and over again. It’s that easy and it’s that good.
Quick and Easy Mexican Breakfast Pizza
If you are a regular reader around here, you know I am a huge breakfast fan. I truly believe it is the most important meal of the day. I strive to get in a balance of carbs and protein with my first meal of the day. If I can get in a serving or two of greens and or veggies then I know I am off to a great start.
You may be thinking that you don’t have time to make something like this for breakfast on a weekday. I am here to tell you-yes you do! I had this yummy Mexican Breakfast Pizza prepped and on the table in about 15 minutes. I used my trusty toaster oven as it heats up super quickly. A regular oven works too.
The “pizza crust” is a 6 inch whole wheat or corn tortilla. Simply warm it up in the toaster or oven while you prep the other ingredients and it will get a little crunchiness to it and better accept the toppings. Your pizza sauce is your favorite salsa. The spicier the better for me.
After spooning on your sauce, add your sauteed veggies, black beans, avocado and 2 eggs prepped to your liking. I personally like scrambled eggs but your fave prep will do. Slide those eggs on top and sprinkle on some cheese. Pop that Mexican Breakfast Pizza right back into your toaster and broil for a minute until the cheese is melted. Melted cheese makes everything better right?
This Mexican Breakfast Pizza is quick and easy and will keep you fit and fueled for what ever your day has on tap. Who is ready to make one of these this week?
Quick and Easy Mexican Breakfast Pizza Meatless Monday
Ingredients
- For each pizza:
- 1 6 inc tortilla of your choice
- 3 Tbl salsa
- 1/2 C chopped fresh spinach
- 1/2 bell or red pepper
- 1/4 C black beans
- 1/4 C diced tomatoes
- 2 eggs- prepared any style
- sprinkle of shredded cheddar or Mont jack cheese
Instructions
- preheat toaster over to 400
- heat tortilla for approx 5 min
- meanwhile saute peppers and spinach
- spoon salsa onto tortilla
- layer with veggies and black beans and tomatoes
- Add scrambled or eggs prepped your fave way
- sprinkle on cheddar
- return to toaster oven
- set to broil for approx 2 min to melt cheese
- slice and enjoy!

Sounds delicious and I pinned it to try (maybe this weekend)! I’m sure I could do the eggs the day before because I only have five minute to eat breakfast most days between the time my 6 AM client leaves my house and I have to jump in the car to get to the gym for my next client.
