Thanks for joining Sarah and me for Meatless Monday today. First a huge congratulations to my co-host Sarah on the birth of her son last Sunday. Thrilled to hear that everyone is doing well. Today I have a quick and easy Mexican Breakfast Pizza that you are going to want to make over and over again. It’s that easy and it’s that good.
Quick and Easy Mexican Breakfast Pizza
If you are a regular reader around here, you know I am a huge breakfast fan. I truly believe it is the most important meal of the day. I strive to get in a balance of carbs and protein with my first meal of the day. If I can get in a serving or two of greens and or veggies then I know I am off to a great start.
You may be thinking that you don’t have time to make something like this for breakfast on a weekday. I am here to tell you-yes you do! I had this yummy Mexican Breakfast Pizza prepped and on the table in about 15 minutes. I used my trusty toaster oven as it heats up super quickly. A regular oven works too.
The “pizza crust” is a 6 inch whole wheat or corn tortilla. Simply warm it up in the toaster or oven while you prep the other ingredients and it will get a little crunchiness to it and better accept the toppings. Your pizza sauce is your favorite salsa. The spicier the better for me.
After spooning on your sauce, add your sauteed veggies, black beans, avocado and 2 eggs prepped to your liking. I personally like scrambled eggs but your fave prep will do. Slide those eggs on top and sprinkle on some cheese. Pop that Mexican Breakfast Pizza right back into your toaster and broil for a minute until the cheese is melted. Melted cheese makes everything better right?
This Mexican Breakfast Pizza is quick and easy and will keep you fit and fueled for what ever your day has on tap. Who is ready to make one of these this week?

Pizza all day everyday is ok with me. I like to start the day with spicy flavors so this is perfect. Nice and easy to make too.
I am much more of a savory breakfast eater myself!
This is such a great idea for breakfast. So simple but it looks delicious
So simple and worth the extra few minutes to prepare!
This would be a weekend-level breakfast for me, but it sounds great. I love savory breakfasts — but not spicy salsa!
I am more of a savory breakfast person myself. You can use any salsa I definitely am a spicy person 🙂
YUM!
Thanks one of my faves!
Looks delicious! I love breakfast tacos but never thought to try it in pizza form.

Breakfast pizza is my favorite! Love having so many options to top it with.
Yes so many options!
I gave up pizza (in all its forms) for Lent but I look forward to making this after Easter!
OOh that’s a tough one!
Mexican is one thing I use to have a few times a week that I haven’t had more than a couple times over the last 9 months. Quick and easy, can’t wait to try this. Heading shopping today and picking up avocados, the only thing I’m missing.
I would love to know what you think!
Looks amazing. Would def spice up my usual scrambled eggs on toast.
OH it sure would!
I would definitely make this. So easy and eggs with black beans, salsa and avocado tastes so good. I may actually have to make this for dinner tonight as I am flying solo.
Ooh I hope you had the chance to try it out!
You can never go wrong with pizza at any time of day!
I have to agree!
I’m going to try this for little man. He absolutely loves avocado and egg in any form, so this will be right up his alley!
OH great I really hope he enjoys it!

Thank you for sharing!
Thanks for checking them out! They are super easy
Sounds delicious and I pinned it to try (maybe this weekend)! I’m sure I could do the eggs the day before because I only have five minute to eat breakfast most days between the time my 6 AM client leaves my house and I have to jump in the car to get to the gym for my next client.
wow that is a tight schedule! Hope you have time to try it this weekend
