Pineapple Cantaloupe Carpacccio

Thanks for joining Sarah and me for Meatless Monday today! I don’t about you, but I feel like the summer weeks just keep flying by. It continues to be quite hot and humid around here and I continue to crave lighter, easier meals that require less cooking. The fruit has been so amazing the past few weeks that I can’t seem to get enough of it. Today I am sharing one of my new faves Pineapple Cantaloupe Carpaccio.

PIneapple Cantaloupe Carpaccio

This Pineapple Cantaloupe Carpaccio is so simple but oh so delcious. It’s perfect for a snack, dessert and would make a great party dish. Fruit right now is so sweet and juicy that it doesn’t need much.

Pineapple Cantaloupe Carpaccio

I’ve sliced the pineapple and the cantaloupe very thin and layered it. It’s then sprinkled with a little fresh mint & pomegranate seeds. Finally I drizzles a touch of honey and a splash of a cherry flavored balsamic vinegar. Oh so delicious!

Pineapple Cantaloupe Carpaccio

Not only is Pineapple delicious it is chock full of potassium and vitamin C so makes the perfect post workout snack. Cantaloupe is also loaded with potassium and vitamin C in addition to folate. So eat up and feel good about the foods you put into your body.

PIneapple Cantaloupe Carpaccio

Ingredients

  • 1 pineapple- sliced very thinly
  • 1 cantaloupe-seeded and sliced thin
  • 1/3 C of pomegranate seeds
  • 1 Tbl fresh mint-chopped
  • 2 Tbl good quality 100% honey
  • 1/4 C cherry balsamic or similar substitute

Instructions

  1. slice pineapple and melon super thin and alternate on a large plate
  2. Sprinkle with pomegranate seeds and mint
  3. Drizzle with honey and balsamic

    This is such a great idea! I love the combination of flavors. It is pretty darn warm in our apartment right now, so this type of carpaccio sounds amazing!

    Yum! My son has been getting fresh pineapple every week – If he can figure out how to peel and slice it now I’ve got no excuse.

      I suggest slicing it then cutting off the peel it’s easier that way. Enjoy!

    That is so pretty! And it sounds so refreshing for Summer. I’ve really enjoyed grilling pineapple as it brings out the sweetness even more but this sounds like a good alternative.

    This sounds great. Do you find the cherry balsamic in regular stores or specialty?

      Thanks! I found the cherry balsamic in an olive oil store. You can also check on line they have great flavored oils and balsamics that really add lots to salads.

    This is a brilliant idea! Perfect for summer. I agree that summer is flying by, but unlike most people I am perfectly happy that it is doing so. In fact the faster we get to fall the happier I am.

    Pineapple and cantaloupe are two of my all-time favorite fruits. This combo looks SO refreshing. Also, I’ve never heard of cherry flavored balsamic vinegar, but I think I need to find some because it sound delicious. Such a pretty recipe! Thanks for the idea. 🙂
