Peanut Butter Oatmeal Protein Bars

      • Happy  Meatless Monday friends! In my quest to eat more oatmeal, I’ve found that it makes great protein bars. Add in some peanut butter and even better! It’s like breakfast and dessert at the same time right?! Please join Tina and me to check out all of the great veggie creations this week.
      • I’ve seen so many recipes using powdered peanut butter the last few months but I had never tried it myself until recently. I was given some samples of Peanut Butter and Co’s Mighty Nut to test out this week. I wasn’t exactly sure what to do with it at first however adding Mighty Nut to these oatmeal bars was fabulous.  Might Nut is great for baking and adding to smoothies or sauces. Much of the fat and calories are removed in the process and you are left with tons of protein and flavor. Hope you enjoy! And don’t worry, I am going to share! I have a giveaway at the bottom for a jar of the flavor of your choice of Mighty Nut.

Peanut Butter Oatmeal Protein Bars

Ingredients

  • 1 1/2 c steel cut oatmeal
  • 1/4 c flax seed
  • 1 c protein powder of your choice
  • 3 tbl coconut oil
  • 2 eggs
  • 1 c unsweetened apple sauce
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1/4 tsp salt
  • 2 tbl Mighty Nut original powdered peanut butter
  • 2 tbl Mighty Nut chocolate powdered peanut buter
  • 6 Tbl water
  • 1/2 c dried unsweetened cranberries
  • 1/2 c pumpkin seeds
  • 1/2 c mini chocolate chips

Instructions

  1. Preheat oven to 325
  2. Add oatmeal, flax, protein powder & coconut oil to food processor & pulse until smooth
  3. Transfer to mixing bowl and add:
  4. eggs, apple sauce, cinnamon, vanilla, salt, pumpkin seeds, choc chips & cranberries stir to combine
  5. In a separate bowl mix Mighty Nut powders with approx 6 tbl of water and stir
  6. Adjust water amount to achieve pnb of a regular consistency & add to bowl & mix to combine
  7. Line a 9 x 13 dish with parchment paper
  8. Spread batter evenly into dish and bake for 23 min
  9. Remove and allow to cool before cutting into bars
  10. Can be frozen for later use

    Never heard of powdered peanut butter ! Hmmm…. its hard to find peanut butter in France, thus I doubt the powdered version will make its way here. Too bad, I would love to try it !

    I’m a PB purist, so I’d pick plain and use it in my overnight oats. Those bars look yummy but so many calories packed into each bite too!

      You could use regular pnb to make them as well. I prefer the plain flavor myself.

    Holy molly! Those look delicious!!

    I have contemplated powder PB but never really wrapped my mind around it but I can see now how it would be great for baking and adding to smoothies. Learn something new everyday!

    I’m not a big peanut butter eater but I do love PB cookies! I think this powder would make it so much easier to mix in than the actual stuff. But are the cookies creamy? I may have to try this stuff.

      Everyone loves pnb cookies! You can add as much water to it as you wish so you can control how creamy it is. It’s very versatile

    I love the powdered peanut butter (though I use a different brand). It’s so easy and I love the lower fat/calories. Plus, it’s easy to take along in a ziploc bag so I can have my usual pre-run peanutbutter toast even when we’re on vacation 🙂

    I love Peanut Butter & Co. The original shop is in NYC and it’s SO good! I’m so sad I can’t have peanut butter anymore. I keep hoping I’ll grow out of the allergy one day. In the meantime, I need someone to create powdered almond butter!

      Yes there are a lot of ingredients but it literally took me under 10 min to throw it in as it is all together in one bowl.

    Oooh, yum! I would go for original, although I love all of PB&Co stuff. They actually used to sposor a women’s bicycle racing team up this way. Too bad they don’t any more. This recipe looks very tasty! Thanks for sharing. Probably easier to manage than regular PB, also.

    These look great. I love that there’s no added sweeteners. So many of these protein bars have a lot of added sugar, which kind of takes away their purpose. I can’t wait to try these!

    You had me at Peanut Butter. I have never used the powdered peanut butter and I am a little hesitant to try. I like how real peanut butter makes things stick together.
