Mediterranean Veggie Waffle While many of us enjoy a good Van’s® Waffle for breakfast, there is no reason to stop there. Waffles make the perfect sandwich base for lunch too.I’ve been creating new ways to enjoy waffles and this Mediterranean Veggie Waffle Sandwich has been on repeat the last few weeks. Mediterranean veggie waffle While your Van’s Waffles are toasting, you can easily prep the ingredients you need. With hummus, feta cheese, avocado, veggies and hard boiled eggs, this is one filling lunch. Let me show you how easy it is to create your Mediterranean Veggie Waffle Sandwich. Choose your Van’s Waffle. With options like Organic, Gluten Free and Power Grains®, there is something for everyone. My favorite are the Van’s Power Grains® Waffles. With 10-12 grams of protein and and 9-11 grams of whole grains per serving, these waffles fill me up and keep me fueled for whatever my day has on tap. They are made with nutritious grains like cracked red wheat, steel cut oats, millet and brown rice. Egg and dairy free. Spread hummus onto your waffles of choice. Mediterranean veggie waffle Add on your smashed avocado.     10g of protein in a waffle? That’s not bad! Also, your choice of toppings are tasty and healthy (and what a fancy cutting board with your name on it!)

    Growing up, my boys always had Vans waffles for breakfast. I like your adult option here!

    You totally nailed this recipe! Everything about it looks fantastic! I love making my own waffles but it can be time-consuming and not practical for a quick breakfast. I need to look into these waffles!
