Happy Friday friends! This time of year I am all about snuggling up with a fleece throw on the couch and fueling up with warm and cozy foods. I want those cozy foods to be healthy and hearty though. Today I am sharing a few of my favorite, Go To Healthy Vegetarian Recipes To Keep You Cozy And Warm All Winter Long.
Healthy Vegetarian Recipes To Keep You Cozy And Warm All Winter Long
Everyone loves a good Mac N’ Cheese right? This healthier version is made with vitamin packed Spaghetti Squash and calcium packed broccoli. The perfect comfort food. Find the recipe here.
Chilly weather calls for some seriously comforting Chili and this White Bean and Quinoa Chili is a nice change of pace from traditional chili recipes.
I am all about a good, savory bread in the winter time. Why not try this Sun dried Tomato and Squash Bread to go with a nice, hot bowl of soup this weekend?
Speaking of soup, I continue to make this Veggie packed Spicy Thai Tofu Noodle Soup It will warm your belly on the coldest of days and is oh so satisfying.
Feeling a little Taco Tuesday-ish? Try this easy Squash and Black Bean Quesadilla easy enough for a weeknight meal. The whole family will love it! Add for favorite salsa and guacamole on top.
So which one of these Healthy Vegetarian Recipes are you wanting to try? What are your go to winter comfort foods right now? I am looking for a few new ideas myself.
