Chilly weather calls for some seriously comforting Chili and this White Bean and Quinoa Chili is a nice change of pace from traditional chili recipes.
I am all about a good, savory bread in the winter time. Why not try this Sun dried Tomato and Squash Bread to go with a nice, hot bowl of soup this weekend?
Speaking of soup, I continue to make this Veggie packed Spicy Thai Tofu Noodle Soup It will warm your belly on the coldest of days and is oh so satisfying.

I have been meaning to try that Thai soup, it sounds so good. I made a vegan Shepard’s Pie not to long ago that was super comforting and cozy.
I have not been able to make a vegan Shepard’s pie that I really love yet!
That mac and cheese spaghetti squash sounds delicious. You can feel a little less guilty eating your favorite comfort food when you eat it this way.

Chili is my go to winter meal. I love both how easy it is to make thanks to the crock pot, and the infinite number of variations there are.

Yummmm. These all look so delicious! I think the white bean quinoa chili would be a perfect meal prep item. I’m all about things I can make big batches of on Sunday, and then have lunch for the rest of the week! And it always makes me happy when I know I have a warm lunch waiting.
