Thanks for joining Sarah and me for Meatless Monday today. I am continuing on my green theme for the month of March. Today, I am sharing with you a simple and quick side dish. This Easy Oven Roasted Broccolini with Orange Balsamic Glaze is a yummy side for the whole family to enjoy.
I chose Broccolini today because it looked fresh and good in the produce aisle. You can easily adapt this recipe to use broccoli, asparagus, cauliflower, zucchini or any veggie you choose. I like the sweet and savory combination of the fresh orange juice and the balsamic. We can all use a little shot of some extra vitamin C from the orange juice.
This Oven Roasted Broccolini with Orange Balsamic Glaze can literally be prepped in about 5 min. From there, it’s popped into the oven to roast for 10-15 minutes. It’s that simple! Adding a fruity balsamic glaze, like this one, really elevates a boring veggie into a a delicious side. I threw some orange slices on top of the broccolini while it was roasting in the oven. The juices from the fresh orange are really incorporated into the veggies to bring even more flavor. This will work well with any vegetable you choose to use.
For me, cooking is a true stress reliever. I find it really cathartic to whisk, stir, sauté and create meals. I hope that can offer you some ideas to bring you the same kind of stress relief. Easy Oven Roasted Broccolini with Orange Balsamic Glaze
An easy, family friendly side dish using many pantry staples. Suitable for vegan and gluten free diets
Ingredients
- 2 bunches of broccolini (or vegetable of choice)
- 2 garlic cloves-minced
- juice of 1/2 lemon
- juice of 1/2 orange or 1/3 C of orange juice
- 2 Tbl honey
- 1/2 C olive oil
- 3 Tbl balsamic vinegar
Instructions
- wash and dry broccolini
- place on a roasting pan
- whisk all ingredients for glaze and drizzle onto veggies
- roast at 375 degrees for 15 min
- serve warm or at room temperature
Notes
Can sub out broccolini with broccoli, asparagus, or zucchini
