Are you a french fry lover? It’s okay you can admit it. I mean, who doesn’t love French Fries? I’ve found a way to enjoy your fries and feel no guilt whatsoever about doing so. What is this magic I speak of? Simple really. Fall’s totally underrated Delicata Squash makes perfect french fries. These are no ordinary fries, however. Dive into these Delightful Delicata Curry Fries
Not only are these crispy and crunchy bites of delight ridiculously easy to make, but you will only need 5 ingredients. Once you get your hands on some Delicata Squash, you will most likely have all the remaining ingredients right in your pantry. With a simple blend of curry powder, garlic powder, salt, pepper, and a dash of nutmeg or cinnamon, you are ready to go.
How should I cook the Delicata Curry Fries?
First, I suggest you slice them very thin to offer a crunchier french fry experience. Or, If you like a thicker French fry, who am I to stop you. Slice them thicker. Delicata Squash is much easier to slice than some of their squash relatives. It’s perfectly commonplace to eat the skin of the squash as well. In fact, keeping the thin skin intact helps to keep the squash from getting mushy.
Bake or Air fry?
I’ve been a little obsessed with my toaster oven/air fry combo of late. It’s fun to find new foods to cook with the air fry mode. So, if you have an air fryer, I highly suggest making these Delicata Curry fries that way. They will cook for less time and be crispier. No air fryer? No problem. It’s just as easy and delish to bake these curry fries in the oven at 400 degrees.
They are best enjoyed a la minute and I like mine dipped into a little ketchup or bbq sauce. They would be great dipped into hummus. I am now wishing that I tried that before I ate them all! Delicata Squash is low carb and low calorie. These Curry Fries make a fantastic side dish with just about any protein. Hope you enjoy it!

Spice up your French Fry game with these delightful Delicata Squash Curry Fries. vegan, gf, low calorie, low cab
Ingredients
- 2 large Deilicata Sqash
- olive oil to coat
- salt & pepper to taste
- 1-2 tsp curry powder
- 1 tsp garlic powder and cinnamon
Instructions
- slice squash horizontally and remove seeds, leaving skin on
- slice thinly into french fires and add to mixing bowl
- coat with olive oil
- sprinkle on all spices and mix well
- either air fry for 12-15 min or
- bake at 400 degrees for 20-30 min
- serve immediately

It is a more subtle squash taste and much easier to work with as the skin is thinner than a butternut. Give it try!
