Thanks for joining Sarah and me for Meatless Monday today. As the temps are heating up, I am so not wanting to eat hot foods. I am also not wanting to spend lots of time cooking. Sound familiar? One of my favorite go to meals are veggie power bowls and today I’ve got a power packed Crispy Chick Pea & Farro Power Bowl with Tahini Dressing that I know you will love. Crispy Chick Pea & Farro Power Bowl with Tahini Dressing

This is no ordinary salad mind you! This bowl of goodness is packed with plant based protein to keep you fueled up and ready to take on whatever is on your day demands. Pan frying your chick peas in European Extra Virgin Olive Oil for a few minutes creates the most wonderful crispy texture and really brings out the nutty flavor of the chick pea. Adding in a sprinkle of siracha powder really takes them over the top.

You can use any grain you wish for this Crispy Chick Pea & Farro Bowl but my personal favorite is farro. Farro is ancient grain of Italy that has a nutty, chewy texture which makes it perfect for soups, salads and sides. It’s a great source of iron and high in fiber. I like to cook mine with a splash of European extra virgin olive oil.

Pairing the Crispy Chick pea and Farro with a creamy Tahini dressing is a match made in heaven. All of the nutty flavors blend together in perfect harmony. The farro, chick peas and the tahini can all be made in advance and then combined together when ready to eat. I enjoy eating this power bowl and room temperature in the summer which makes it a great take along lunch.

Best of Meatless Monday 2017| Crispy Chick pea and farro| Pantry staples

Ingredients

  • Romaine or spinach
  • 1 15 oz can of Chick Peas-rinsed, drained and dried
  • European Extra Virgin Olive Oil for cooking
  • optional dash of Siracha powder
  • 1 roasted beet
  • 1 C of cooked Farro
  • 1/2 C feta cheese
  • 1 C cherry or grape tomatoes halved
  • 1 zucchini sliced and roasted (or cucumber)
  • 1 Avocado
  • Tahini Dressing:
  • Splash of EVOO
  • 1/2 C tahini
  • 1/2 C water
  • juice of one lemon
  • 1 tsp garlic chopped
  • dash of cayenne pepper
  • 1 tbl Harissa (optional)

Instructions

  1. Cook Farro according to package and allow to cool
  2. Coat a med pan with Extra Virgin Olive Oil and bring to med high heat
  3. Saute chick peas w a little salt & pepper until crispy
  4. Stirring every few min
  5. add optional Siracha powder
  6. set aside
  7. Meanwhile assemble bowl with lettuce, tomato, beets, zucchini and avocado
  8. For Tahini dressing:
  9. Whisk together tahini, EVOO, water, lemon, garlic, cayenne & harissa
  10. Drizzle on top
  11. Add more water if necessary to reach desired consistency

    I’ve been loving farro lately! The texture is awesome and it really fills me up! The crispy chickpeas sound yummy, too!

    I don’t think I do tahini?? LOL! Sounds and looks delicious! My desire to cook in the summer drags too- it is just to hot to do anything other than grill!

    Farro was a fave of mine before I had to give up gluten. I think this would also be nice with quinoa or brown rice. Thanks for sharing!

    I would probably have to omit the avocado and beets (sorry!)..but everything else sounds like an awesome mix. I’ve never done much with chick peas…sauteing them in the oil sounds tasty!

    I’ve never cooked with tahini before! I’ve seen recipes with it included though. This sounds like a perfect meal for a hot day. My favorite legume are chickpeas. They’re so versatile and can be included in many various dishes.

    This looks great! I’ll do crispy chickpeas sometimes for salads and mix it with buffalo sauce – soooo good. Can’t wait to try this healthy bowl you’ve put together!

    I was drooling over this post on IG. Tahini is one of those things that I love, but never think to use for some reason. That nutty flavor is perfect with the avocado and beets!
