Garam Masala Roasted Tomato & Cauliflower Soup
This is not your plain old tomato soup. I’ve combined some of my favorite savory spices to blend them into one delicious satisfying bowl of goodness. Let me tell you more.
What is Garam Masala?
It is an Indian spice blend used to make curry, stews, and yes soups. Cinnamon, cumin, cardamon, and coriander are combined to create a savory spice mix. I also add in extra cumin and turmeric. If you like earthy, savory spices with a little heat then Garam Masala is for you. Many grocery stores stock this spice where you would find regular spices. You can also purchase it on amazon.
Is this soup spicy?
The beauty of a soup like this is that you can adjust the amount of spice. Want it spicier? Simply add in more curry and Garam Masala. This is one of those recipes that you can taste and adjust along the way.
Tell me how to prepare it
Roasting the fresh tomatoes and cauliflower brings out their flavor before adding them to the soup. Then, we blend the veggies together with some canned tomatoes and lots of yummy spices. This Garam Masala Roasted Tomato and Cauliflower soup is pureéd. I used an immersion blender ( I use this simple inexpensive one) but a regular blender works just fine as well.
Can I make this soup ahead?
Yes indeed! This tasty soup can be prepared ahead and reheated later. It can also be frozen for later use.

Ingredients
- 12 oz package of Campari or Roma tomatoes-halved
- 2 Cups of fresh cauliflower
- 3 garlic cloves
- 1 onion-diced
- 28 oz can of whole tomatoes (San Marzano preferred)
- 3 C vegetable broth-low sodium
- 1 8 oz can lite coconut milk
- 1 tsp minced ginger
- 2 Tabl garam masala spice
- 1 tsp cumin
- 1 tsp turmeric
- 1 tsp cayenne pepper
Instructions
- preheat oven to 400
- toss tomatoes, cauliflower & garlic w 1 tsp of garam masala and a drizzle of olive oil
- roast on a foil lined baking sheet for 20 min
- in a large stock pot add
- canned tomatoes, broth, onion, ginger and remaining spices
- add in roasted tomato and cauliflower mixture
- use an immersion blender to purée
- fold in canned coconut milk to combine
- simmer for at least 15 min
Notes
This soup is full of savory Indian spices. Add salt and pepper to taste. For a more mild soup omit cayenne pepper or add more lite coconut milk
