Easy Squash, Spinach & Goat Cheese Breakfast Casserole
Starting off the day with a serving of greens just makes me feel ahead of the game. I like to use spinach but kale would work just as well. Adding some seasonal vegetables into this squash, spinach & goat cheese breakfast casserole gives it some heartiness as well as a boost of Vitamin C and Beta Carotene.
How to make this Squash, Spinach & Goat Cheese Breakfast Casserole
The easiest way to assemble this breakfast is to use leftover butternut squash if you have it. If not, no sweat you can purchase frozen butternut squash or easily make your own. Most grocery stores now sell butternut squash already peeled and cut so all you have to do is steam it or sauté it. I popped mine into the air fryer for 10 minutes and it was perfect.
Once you have your squash ready to go simply combine it with your spinach in a large bowl. Next, we add in your eggs, I chose to use a combination of eggs and liquid egg substitute to up the protein and keep the calories and fat a little lower. Finally, we add in some goat cheese well, because Goat cheese.
Next, we gently pour the mixture into a pie dish or casserole and pop it into the oven. It cooks for about 40 minutes and then it’s ready to enjoy. It’s easy to cut it into 4 individual portions to enjoy all week. Super easy!

Start your day off strong with this high protein, low carb easy make ahead Squash, Spinach & Goat Cheese Breakfast Casserole
Ingredients
- 6 large eggs
- 1 C Egg Beaters liquid egg
- 200 g cooked Butternut Squash- diced
- 3 C fresh spinach- diced
- 4 oz Goat Cheese
- salt & pepper to taste
- 1/2 Tsp nutmeg
- optional dash of hot sauce
Instructions
- Preheat oven to 375
- In a large mixing bowl whisk eggs and egg substitute
- add in salt, pepper, nutmeg and hot sauce
- fold in squash and spinach and Goat Cheese
- spray casserole/pie dish with cooking spray
- pour mixture into dish
- Bake until set about 40 min
- serve warm or cut into pieces for future enjoyments
Notes
Can be kept up to 5 days in frigde and easily reheated in microwave daily
