5 Ingredient Spicy Asian Cucumber Salad
Cucumbers are the perfect base for a summer salad. They are crispy and light. They absorb the flavors of the dressing really well. Cucumbers are also super low in calories but have a nice dose of Vitamin K, Vitamin C, and Potassium. They are 96% water which makes them another source of hydration on a hot summer day.
How easy is this recipe
Could not be easier! Simply thinly slice your cucumbers and add them to a large bowl. Whisk together the 5 ingredients of the marinade and combine. You can enjoy it immediately however, I like to chill the salad for about 20 minutes.
How spicy is this salad?
You control the spice level. Simply add more or less of the red chili paste (Sambal) to suit your taste. For me, the spicier the better.

This Spicy Asian Cucumber salad is a great side to any protein. It would go really well with a grilled burger, chicken, or fish. Great for a summer BBQ. I also love it on its own for a chill afternoon snack or part of an easy lunch.

Ingredients
- 2 large cucumbers (thinly sliced)
- 1/4 C Rice Vinegar
- 1 garlic clove (minced)
- 1 tbl reduced sodium soy sauce
- 2 Tbl Sambal Chili paste

- whisk dressing together and pour on top
