5 Healthy Vegetarian Meals to Fuel Your Workouts

We all have our go to healthy foods that power us through our workouts. I am a vegetarian so I try to really make sure to eat a well balanced diet with enough protein and carbs to power me through my workouts and my day. Here are 5 of my favorite recipes and vegetarian meals. Hope you enjoy them!

1. Breakfast-Eggs are my go to for breakfast. I frequently make a fritatta or Breakfast Casserole that I cut into individual portions and eat all week. I typically pair that with a piece of Ezekiel bread.

This was so good. Cut into individual portions take out daily and microwave for a quick breakfast

2.Lunch I’ve been exploring with Tempeh lately and this is one of my favorite lunches-Tempeh w Asian Rice Noodles

3. This Corn, edamame & Jicama was one of my favorite lunches this summer. Make it once and eat it for a few days.

4. Snacks-  These Chocolate Protein muffins are the bomb! Pair with a Greek yogurt for a filling pre or post workout snack.

5. Dinner-When I am running a lot I always crave pasta (don’t we all?!) but I try to restrain myself. One of my go to meals is Grilled Eggplant Parmasean. So easy and so satisfying.

    I would say that my go to meal would be breakfast, because it is honestly appropriate at any time of day. Brunch, Breakfast for dinner. No one gives you sh*t because you are having eggs!

      I eat it cold but I think you could go either way. I tend to make it and then eat it for a few days. Yum!

    Those muffins look delicious! I do really enjoy eggs as a pre or post run meal. They seem to digest well and provide great energy for the run and for recovery after!

      hmm I wonder why? I really don’t add salt to my food I am very salt sensitive. Perhaps try it with a different sauce? I like to make my own

    Man, that eggplant parm looks delicious! It’s one of my favorite meals too. And I’m a big fan of eggs for breakfast but usually only have time on the weekends. I’m definitely going to try your casserole idea once I have a kitchen again. That sounds so easy and healthy as a grab and go option for week days.

      The casserole is a life saver on busy mornings and you can really change around the veggies to make it different each week. The eggplant is so good too.

    Looks like some yummy options! I usually make some sort of egg quiche or casserole and then eat it for a few days, but haven’t done that in a while. I need to get back in the habit.

    Thanks for sharing your list. As a vegetarian, it’s nice to see other options than my typical go-to meals. I love cooking with tempeh since it’s so versatile.

    All great recipes! I love a simple tempeh and veggie stir-fry, it’s my go-to meal when I don’t feel very creative but want something healthy! That eggplant parm is drool worthy!

    That egg fritata looks yummy! I make some awesome egg muffins with cottage cheese and apple sausage (which I know you wouldn’t eat) but would be delicious without as well!

    Great suggestions! Quinoa is my favourite vegetarian fuel and I use a vegetable protein powder in my shakes.

    I love eggs too and your breakfast casserole looks fantastic. I do eat meat, so I enjoy a little sausage sometimes too. My favorite go to meal is grilled vegetables (outside), grilled sweet potatoes and some kind of fish. Not very original, but it sure is tasty, with different spices added!

    Your corn and edamame salad looks delicious! Making an egg casserole to eat throughout the week is a great idea! I’m always in such a hurry at breakfast time that I settle for cereal (although I do love it)!
