It’s Friday! Time for the fabulous link up with the DC Trifecta Cynthia, Mar & Courtney
We all have our go to healthy foods that power us through our workouts. I am a vegetarian so I try to really make sure to eat a well balanced diet with enough protein and carbs to power me through my workouts and my day. Here are 5 of my favorite recipes and vegetarian meals. Hope you enjoy them!
1. Breakfast-Eggs are my go to for breakfast. I frequently make a fritatta or Breakfast Casserole that I cut into individual portions and eat all week. I typically pair that with a piece of Ezekiel bread.

2.Lunch I’ve been exploring with Tempeh lately and this is one of my favorite lunches-Tempeh w Asian Rice Noodles
3. This Corn, edamame & Jicama was one of my favorite lunches this summer. Make it once and eat it for a few days.
4. Snacks-ย These Chocolate Protein muffins are the bomb! Pair with a Greek yogurt for a filling pre or post workout snack.

5. Dinner-When I am running a lot I always crave pasta (don’t we all?!) but I try to restrain myself. One of my go to meals is Grilled Eggplant Parmasean. So easy and so satisfying.

What’s your go to meal?
I would say that my go to meal would be breakfast, because it is honestly appropriate at any time of day. Brunch, Breakfast for dinner. No one gives you sh*t because you are having eggs!
I love breakfast all the time too! My kids love breakfast for dinner.
I love these ideas. I love most egg dishes – yum!
Egg dishes are my favorite too! Have a good one!
They all look fantastic! Is #3 a hot dish or is it served cold?
I eat it cold but I think you could go either way. I tend to make it and then eat it for a few days. Yum!
Those muffins look delicious! I do really enjoy eggs as a pre or post run meal. They seem to digest well and provide great energy for the run and for recovery after!
Thanks! The muffins are great before or after a run-hope you try them ๐
I need to get on the breakfast casserole train- it would be a tasty change for my palate! Oh and those muffins look divine…totally going to check them out!!!

Thanks! It is yummy!
That eggplant parmesan looks good. I tried making it and it came out too salty. BLEH
hmm I wonder why? I really don’t add salt to my food I am very salt sensitive. Perhaps try it with a different sauce? I like to make my own
Man, that eggplant parm looks delicious! It’s one of my favorite meals too. And I’m a big fan of eggs for breakfast but usually only have time on the weekends. I’m definitely going to try your casserole idea once I have a kitchen again. That sounds so easy and healthy as a grab and go option for week days.
The casserole is a life saver on busy mornings and you can really change around the veggies to make it different each week. The eggplant is so good too.
Deborah, that Breakfast Casserole recipe looks AMAZING! I’ve pinned it to my Pinterest account so that I won’t forget to print it off later; I’m definitely going to try that out soon. Thanks so much for sharing these great ideas; hope you have a wonderful weekend!
Thanks so much-I hope you like it! You can change around the ingredients to switch it up each time, Have a great day!
Looks like some yummy options! I usually make some sort of egg quiche or casserole and then eat it for a few days, but haven’t done that in a while. I need to get back in the habit.
It makes it so much easier for me in the morning when I have it made up in advance. It’s so easy to switch it up for variety. Have a great race this weekend ๐
Mmmm….all look delicious! And I love tempeh, need to plan that in a meal again soon. ๐
Thanks! Hope you give some of them a try.

Those are yummy meals! Thanks for sharing. My go to POST long run is a recovery shake from Vega. Yum!
Thanks! I tried the vega and found it kind of chalky perhaps I tried the wrong one?
I was really curious to see what you’d post and you didn’t let me down! I do like eggs (kind of a comfort food, really) and eat omelets several days/week. You gave me some new ideas…
Great so glad! Let me know if you make anything. Have a good one ๐
I love eggs too and your breakfast casserole looks fantastic. I do eat meat, so I enjoy a little sausage sometimes too. My favorite go to meal is grilled vegetables (outside), grilled sweet potatoes and some kind of fish. Not very original, but it sure is tasty, with different spices added!
I love grilled sweet potatoes too-really brings out the flavor. You could put meat into the casserole too.
That grilled parm looks faaaaabulous! Making that and your protein muffins asap!
Thanks! Hope you like them ๐
as always, great recipes!! i am not an egg leader but my husband loves them!
He would be happy if you made him this one I bet!
Your corn and edamame salad looks delicious! Making an egg casserole to eat throughout the week is a great idea! I’m always in such a hurry at breakfast time that I settle for cereal (although I do love it)!
Thanks! I’m always in a hurry too in the morning and it’s great to have already made.
