Happy 4th of July! Thanks for joining me and Sarah for Meatless Monday today. Instead of a new recipe today, I am sharing a few of my favorite summer recipes. Perhaps you missed some the first time around!

4 Vegetarian Summer Favorites for the 4th of July

This Red, White & Blueberry Kale salad is perfect for the 4th of course and also great for all those summer BBQ’s. Pomegranate seeds pair so nicely with kale and the Parmesan cheese really tops it off.

I recently made this 7  layer Mediterranean salad and oh my goodness was it delicious. Plus it makes such a great presentation! It super easy to put together but looks like it took hours. The best kind of recipe for sure!

Summer “Squiche” This is one of my all time favorite recipes! I’ve made a traditional quiche a whole lot healthier by using spaghetti Squash for the crust. So delicious! I love to make it for dinner and then eat the leftovers for breakfast the next day. I promise you will love it too.

Grown Up Grilled Cheese and Polenta Fries

This sandwich is perfect anytime of the year. I added hummus, yes hummus to create a unique taste. Grown up grilled cheese has also become a crowd favorite at our house. Hope you give it a try!

    Oh, these all look so good! I’m always looking for good vegetarian recipes (even better if my toddler will eat them!). The grilled cheese would probably thrill him!

    I love adding the hummus to the grill cheese- yum ! I made the baked beans tho weekend! ???? Next I need to try that layered salad – these all look good!
