Happy Meatless Monday veggie lovers! Who is ready for some football?! Or maybe just some football food?
For some reason, I always eat way too much while watching football games! How about you? I realized that I could easily whip up a healthier version of one of my faves, nachos, and still feel completely satisfied. I always felt the chip was just a vehicle to get the good stuff into my mouth anyway so why not make it a veggie?! Enter Zucchini- that versatile veggie that is perfect for everything and makes a great nacho.
My boys (hubby and son) are huge Eagles fans so this one’s for them-Go Eagles!!
Please join Tina and I for this week’s Meatless Monday linkup. Let’s check out all the great recipes below and show some of the other bloggers some love too.
For me the toppings are the best part and the Zucchini makes a great “nacho chip”. I’ve thrown on all my faves: cheese, black beans, salsa, corn, tomato, sour cream, lettuce, cilantro and jalapenos of course! This is so easy to whip up and your guests will love it. You won’t even miss the chips!
While the Zucchini is cooking, it’s easy to arrange all the nacho toppings and have them ready to go. If possible keep zucchini nachos on a warming tray when serving.

It was sooo good!
Oh this is SO clever!!! My friend you are the queen of new, unique recipes, and I love it!
Ah thanks! They were really yummy 🙂
That seriously looks so good. I’ll definitely be trying that out this season!
Thanks! I think you will like them
I love that yourself zucchini instead of chips! Nice and light snack.
Thanks! I really love how they came out
Yum yum yum! Omg, last night Alex and I went to dinner at Lyfe Kitchen, I was totally full but still had my snack after, very full and content then, then we went out to meet a friend and Alex got nachos….
Yeah.
I felt sick after.
I can’t help myself with food! These would have been a far better choice!
Nachos are always hard to resist! Hope you check these out
Ah, that’s fun! Very veggie 😉
Thanks!
Such a genius idea! I could totally have munched on those while I was watching football yesterday!
They came out so good!
Ohhhhhh now this looks perfect for a football thing we have coming up! I know very little about football so I need something food wise to distract from that! Thanks Deborah, you just saved me.
LOL happy to help 🙂
Yum!! I’ve got to try this next week!
I think you will like it!
Yum! Looks like all the flavors of nachos without the chips! GEnius!
exactly! Enjoy 🙂
Yum!! Zucchini is so versatile! It’s delicious as a savory meal, but I often add it into my banana ice cream and oatmeal. This looks delicious!
Well that’s interesting too!
That is such a brilliant idea!!! I love cheese on my nachos, not the fake kind, like real sharp cheddar. I hope you have a great day and thanks for the idea
bakingrunner.blogspot.com
I never waste my time or calories on fake cheese 🙂
That’s a great idea to use zucchini instead of chips! A much healthier version! I’m going to have to try this! Great idea for football season!
Thanks I hope you enjoy!
Totally guiltless nachos… I’m all about that. Now I know what I’m eating next Sunday! 🙂
Awesome! Let me know if you like them
Great idea! You’re right that the toppings are the best part of nachos 🙂
I know!!
You are officially a genius! Zucchini instead of chips?! I would have never thought of it! Great alternative and great for kids.
LOl thanks enjoy!
wow this looks SO good! I love Zucchini – such a versatile vegetable. Do you eat this with a fork since there are no chips to pick up?
yes A fork is necessary!
I totally agree that chips are just the vehicle for all the goodness. I’ve been searching for an alternative because nachos are so good! Might have to try this zucchini business.
I hope you give them a chance! Enjoy
Just to clarify… the zucchini chips are soft, not crispy? That platter looks so inviting! I think I need to try this.
They are soft yes so you would need to eat them with a fork.
Genius! I had nachos last night (for the Cowboys game) made with Beanitos. They were delicious, but would have been even healthier had I made them this way! I have to remember this for next week.
You are from NYC-what’s all this Cowboys business about?? LOL
this is such a great idea!!!
Thanks hope you enjoy!
So I’ve TOTALLY been trying to think of how to make a healthier version of nachos… how did I NEVER think of zucchini? Definitely making this soon!!
They were great hope you enjoy!
Ooohh…I really like this one! It’s so pretty and colorful too. I’m a huge fan of zucchini. I think my guys could still load this on their chips if they just had to!
Absolutely!!
Oh my gosh!! What a genius idea!! I love it! I often swap carrots or celery in place of chips with salsa, but I’ve never tried zucchini! Sounds delicious! I’m all about those healthy swaps! Great recipe! Thanks for sharing!
Glad you like it! Thanks
I LOVE nachos during football season and this recipe looks awesome! Never would have thought to use zucchini…delicious! I need to whip this up soon!
Thanks! Everyone loves nachos
This is so genius! I’ve done this with sweet potato but never though to do it with zucchini. Dave is going to LOVE this! So smart, I’m definitely sharing this with my clients too!!
Well thanks!! I hope you all love it 🙂
Guac is one of my favorite nacho toppings…but to be honest, any cheese will do 😛 love the idea of using zucchini in this dish!
I love guac too but I went straight avocado chunks for this one. I love cheese also!
Oh my I am all on top of this! Zucchini is my new fav!!!!
Mine too it’s so good right now isn’t it?!
This looks really good – what a clever idea! I’m with you on eating too much while watching football – all that “grazing” can be dangerous 😉
I know why do we do that?
What a great nacho hack!!
I’ve seen sweet potato, but zucchini is such a great idea!
Thanks I was really happy with how they came out
I have never heard of anything like this, and it looks AMAZING!
I have ton’s of Zucchini right now from my sisters garden, and I love cheese this is so going to be made! I doubt mind will look as pretty as your’s, but hopefully it will taste as good!
I love zucchini right now too! I think you will love this one
What a great idea!! These look super delish! Have you ever tried de-hydrating the zucchini?? I want to try that with this recipe 🙂
I have not! Maybe I should?
I don’t watch football but I’ll pretend if you give me a plate of these!
You bet come on over!
Yum! I love the creativity of this recipe! I’ve made sweet potato nachos before – zucchini sounds so delicious! Plus, with all these veggies, there’s no need to feel guilty about having a beer or two 🙂
Well there’s that! Enjoy
I love this idea!! I used to try and attempt zuchinni chips with salt, pepper, and spray oil and they never turned out very well. Using them with nacho toppings is genius though! If only I could get my bf on board :/
ooh can’t help you there! My hubs won’t eat them either
Yum! I love nachos, and while the chip part is good, I could make do with something else.
I almost wonder if I could use my spiralizer to make really wide ribbons and then make a nacho bowl. The thinner the zucchini, the happier I am.
You know I thought about the spiralizer but thought they might get too soggy. Let me know if you try it
this is such a great idea! I need to make these the next time i buy zucchini!
I really liked how they came out hope you give them a try
Omg this looks absolutely delicious! I’m a huge fan of nachos, so I’ll definitely have to try this switch up.
Thanks hope you enjoy!
I had never thought of using zucchini rounds as “chips.” Cool idea!
Thanks they were really good!
The hubs is sitting here with me and this totally caught his attention 😉 I really never ever would have thought to make nachos with zucchini subbed in for the chips! You always amaze me with meatless Mondays
Well thanks so much that means a lot! I really hope you both enjoy them 🙂
Nachos are my weakness. I can feel a little less guilty about eating these since this eliminates the chips. We are Eagles fans Too. GO EAGLES!!!!
Absolutely! And we are watching the game now looks like it’s turning around
Looks awesome. I’m not sure my hubby would go for the substitution though 😉
You might have to eat them all yourself then!
This is a great idea. And since my husb hates zucchini, I would have it all to myself. 😉
You and me both!
Those are my kind of nachos! Not so much for my family…
My kind too! Invite some girlfriends over and your hubs won’t know what he is missing 🙂
Love the healthy twist on nachos!
Thanks! They were really yummy!
I would sit around watching football all day if these were around 😉
ha ha they were pretty yummy
Why have I never made these ever?!?!?! Zucchini is my go to replacement for pretty much everything. It’s such a versatile vegetable. I must make these soon 🙂
Thanks hope you enjoy!
That is very clever and look super fresh and healthy! Nice! and Go Packers!!!!!
I think you will love them!
So I made your zucchini apple bread last week – it was so, so good!
Another zucchini recipe – I am drooling over this and will have to give it a try.
Let’s hear it for football!!
Thanks so much hope you enjoy this one as well. I definitely have been loving zucchini lately.
This is perfect as our garden is exploding with zucchini right now and I need new things to make. These Nachos look delish. Oh and I am an Eagles fan too! Originally a Philly Girl!
I didn’t know that! My hubs is from Philly. Tough one last night. Hope you enjoy the nachos
Looks good! When Zucchini is in season it can be difficult to find something NEW to do with it. I hate letting things go to waste but I quickly run into zucchini exhaustion. Nachos is a good fix. 😀
Thanks I hope you enjoy it!
This looks delicious, will have to try it! But with zucchini AND chips (cannot be deprived of my chips; love ’em) 🙂
Well you could go that way as well! Enjoy 🙂
Is that a single serving? I’m pretty sure I could eat it all. By myself 🙂
LOL it was pretty hard not too!
These are the Nachos I would totally go for! Smart idea!
Thanks hope you give them a try they were so good!
never would have thought to make zucchini nachos! omg need to make this. I feel like I Say this in every comment to you lol and never end up doing it but I really want to try all these recipes. Maybe I’ll periscope it and do a series on “Trying REcipes from Confessions of a Mother Runner” lol
LOL too funny! I am kind of afraid of periscope I haven’t tried it.
