Zucchini Nachos-Score! Meatless Monday

      • For some reason, I always eat way too much while watching football games! How about you? I realized that I could easily whip up a healthier version of one of my faves, nachos, and still feel completely satisfied. I always felt the chip was just a vehicle to get the good stuff into my mouth anyway so why not make it a veggie?! Enter Zucchini- that versatile veggie that is perfect for everything and makes a great nacho.
      • My boys (hubby and son) are huge Eagles fans so this one’s for them-Go Eagles!!

For me the toppings are the best part and the Zucchini makes a great “nacho chip”. I’ve thrown on all my faves: cheese, black beans, salsa, corn, tomato, sour cream, lettuce, cilantro and jalapenos of course! This is so easy to whip up and your guests will love it. You won’t even miss the chips!

While the Zucchini is cooking, it’s easy to arrange all the nacho toppings and have them ready to go. If possible keep zucchini nachos on a warming tray when serving.

Ingredients

  • 2 Zucchini-sliced into 1/4 inch rounds
  • 1 1/2 c of cheddar cheese
  • 1 avocado-diced
  • 1 lime
  • 1 jalapeno-sliced
  • 1 C black beans
  • 1 C diced tomato
  • 1 C corn (fresh or frozen)
  • 3 tbl sour cream
  • handful fresh cilantro chopped
  • 1/2 C shredded lettuce
  • 3/4 C salsa

Instructions

  1. Preheat oven to 375
  2. line baking sheet with foil and coat with cooking spray
  3. Arrange zucchini slices in a single layer, add salt & pepper & cooking spray
  4. Bake for approx 10 min until softened
  5. Arrange toppings while zucchini is cooking
  6. Remove from oven and sprinkle with half of cheese
  7. Return and bake until cheese is melted
  8. Arranged Zucchini on platter
  9. Top with black beans, corn, tomatoes, salsa, avocado, jalapenos, cilantro, sour cream, salsa and lettuce
  10. Serve!

    Yum yum yum! Omg, last night Alex and I went to dinner at Lyfe Kitchen, I was totally full but still had my snack after, very full and content then, then we went out to meet a friend and Alex got nachos….
    Yeah.
    I felt sick after.
    I can’t help myself with food! These would have been a far better choice!

    Yum!! Zucchini is so versatile! It’s delicious as a savory meal, but I often add it into my banana ice cream and oatmeal. This looks delicious!

    Just to clarify… the zucchini chips are soft, not crispy? That platter looks so inviting! I think I need to try this.

      They are soft yes so you would need to eat them with a fork.

    Genius! I had nachos last night (for the Cowboys game) made with Beanitos. They were delicious, but would have been even healthier had I made them this way! I have to remember this for next week.

    I have never heard of anything like this, and it looks AMAZING!
    I have ton’s of Zucchini right now from my sisters garden, and I love cheese this is so going to be made! I doubt mind will look as pretty as your’s, but hopefully it will taste as good!

    I love this idea!! I used to try and attempt zuchinni chips with salt, pepper, and spray oil and they never turned out very well. Using them with nacho toppings is genius though! If only I could get my bf on board :/

    Yum! I love nachos, and while the chip part is good, I could make do with something else.

    I almost wonder if I could use my spiralizer to make really wide ribbons and then make a nacho bowl. The thinner the zucchini, the happier I am.

    Looks good! When Zucchini is in season it can be difficult to find something NEW to do with it. I hate letting things go to waste but I quickly run into zucchini exhaustion. Nachos is a good fix. 😀
